Since the area is full of tourist hotels, there are many tourists who take out their food. Yagenbori, where Chinchikuri’s main restaurant is located, is a busy nightlife district in Hiroshima. The style around the griddle is to talk with customers, mainly regulars, while cooking.

Okonomiyaki made with “shoburi” beef, a hard-to-find meat that has been passed down from generation to generation in some areas of Nishi Ward, Hiroshima City. Chinchikurin started about 20 years ago with just 8 seats, running an okonomiyaki restaurant and doing some design work behind the scenes. The president used to work part-time in restaurants and had many friends in restaurants.

When he realized that he had more customers, the okonomiyaki restaurant became his main business rather than his design work. Our current managing director is a regular customer when the president was running the first restaurant. Q. Did you voluntarily go to LA? A. No, I did not voluntarily go to LA.

I was a branch manager, and one day the president called me and said that someone had to take the lead in the US. He asked me if I would stay for two years.

I didn’t speak English at all, and I had never been there. But I said if the president said so, I would do it. I made the decision, applied for the visa, and went for the interview. About two months later, I was in the U.S. But it was a good experience.

I became able to speak English, I made friends overseas, and I found out that the food culture of Hiroshima is accepted in the US. This is a video of us teaching Taiwanese people how to make okonomiyaki, as part of their project to experience an okonomiyaki restaurant for a day.
