    I think, the 2 chickens on each other side is to show how the fighters are reactive to another chicken which makes the bettors decide which side they would bet on. What is interesting is how bettors know who they are betting against in all those chaos before the fight, and HOW they are able to collect the exact amount of money won. As you saw, before the 2 cocks face each other, a lot of people are shouting, those are the bettors trying to tell how much money they are putting into a side of the 2 cocks to fight which would i guess be betted against the other side.
