From the studio, I will comment on the whereabouts of two foreigners who love Okinawa, Vincent and Christal, from my perspective of Uchinanchu (Okinawa native). So let’s take a look! Hey, Christal! The end of 2023 is nearing, and when it comes to the end of the year, year-end parties! And more opportunities to enjoy awamori, right? – I agree! And I love awamori! Mixing it with sparkling water, I can drink about, two, or even three big cups? – That much! ?

Of course awamori is to drink, but only in moderation! But not only drinking it, as it is also an important part of Okinawa’s culture, wouldn’t it be nice to also study awamori, tour various places, and have awamori-related experiences as a tourism content ?

– Yeah! Well, as far as I can drink Awamori, anything! – Really!? So your only purpose is to drink. So today, in this wonderful view’s Uruma City – central Okinawa, let’s learn about the history, tours, and experiences related to awamori! Well then… Let’s Goya!

This time, we’ll be introducing Okinawa’s famous awamori, sightseeing, activities, and new ways to enjoy it. It seems Christal loves Awamori! There are a lot of different brands, and to enjoy its unique character, the best way to drink it is on the rocks,

Though lately I’ve been trying out a lot of different ways, like adding awamori and milk, or adding awamori and coffee. I really like it because there are many ways to enjoy it! So, what is your favorite? And I hope Christal will be able to drink some at some point too!

So, let’s take a look at their journey! – Welcome! We’ve been expecting you! – Hello! Thanks for having us! So, here is Shinzato Shuzo, a very famous awamori distillery. – Can you introduce it please? – It is the oldest distillery in Okinawa! – The oldest? – That’s right!

– Founded in 1846, so 177 years old now! – 177 years! That’s amazing! Today, I really want to learn a lot about awamori and how to make it, so I’d appreciate any guidance! Of course! Come on come on! Amazing! There are so many bottles!

– What kind of awamori are those we can see here? – The awamori that we have produced so far! – The ones that are no longer on the market! – Oh, so it’s the awamori that have been made over the years!

– It’s like the history of our distillery company! – Well, it’s been 177 years so… I think it’s really amazing that a company that is this old has produced so many different kinds of awamori,

– so I’d love to see some of your current awamori as well! – Of course! – Yes! Thank you! – So, is this the awamori currently on sale? – It is! This is our brands, the “Kariyushi”, and the other one is the “Ryukyu”. “Kariyushi” is generally a young alcohol.

– So, this “Ryukyu” is a “koshu”, or old alcohol. – Koshu! Old liquor! – Yes. Our brand for “Kusu” (okinawan for “koshu”). People can buy it in bottles, but usually in Okinawa, for special occasions, people buy it in “kame” (jars).

Well, in Okinawa, there is a custom of buying it in jars when your first grandchild or child is born, and then drinking it with them when the child turns 20. That’s right! Vincent also said it but in Okinawa, Awamori is given as a gift at celebratory occasions,

So when I gave birth to my son, I received Awamori as a present, and thought we should drink it together when he’ll turn 20. And Kusu becomes sweeter with time and has a very mellow taste, So I’m looking forward to toasting it with my son looking forward to opening it!

First of all, what are the ingredients for awamori, what are the ingredients used to make it? – It’s Thai rice! – Thai rice! Thai rice! – Thai rice! This kind of long, thin rice. It is also called indica rice, and it’s an Indian type of rice that’s long and thin.

But here, we use not only Thai rice, but also local rice to make our awamori! – Eh! That’s rare! This one? – Here it is! – This is… “Terroir”! ? – Terroir!

– It’s French! Soil and its products, something that belongs to the land! – We thought of it like wine in France! Like French people are growing grapes suitable for the region, and then brewing them, and commercializing them.

When we export awamori overseas, we were often asked “Why using Thai rice when it’s a Japanese alcohol?” So we decided to use locally produced rice and made awamori using rice produced in the prefecture. It looks like a cross between Thai rice and Japonica rice.

Actually, I’ve heard that you can take tours of this factory, so could you please give me a tour today as well? – Shall I show you around? – Yes please! – Well, when you think of awamori, you think of this kind of “kame” (jars)! – That’s right!

– Is there any reason why you use kame? – Well, there are several ways to store awamori, but if you put it in a jar, it will ferment faster. Being made of clay may have a nice effect on the taste too! Like wine barrels’ wood!

Now, in this tank, we put Thai rice as raw ingredient and soak it in water, then we have to steam the soaked rice. This is the steaming machine. Next, we will spray black koji mold. This is black koji mold. This is sprayed on the steamed rice.

Then, this is the room for growing the koji. It’s called a “koji making machine”. It will stay there for two days. Then, it enters the process called fermentation. – Wow!! What a big tank! – It’s a fermentation tank! In this, we put the preparation water, the koji made in two days,

And one more thing: awamori yeast. Therefore, it is fermented over a period of 20 days. – It becomes what’s called “Moromi”. – Moromi! I’ve heard of it. – Then, we take that moromi and distill it. In the distillation process, this moromi is transferred to a large tank and heated.

Then, the alcohol inside turns into a gas, which is then rapidly cooled and liquefied, which is the process of distillation. Wow… listening to that, I’d like to try some tasting now, is that okay? Thank you! Now, it’s tasting time! I love studying, but… I was really looking forward to this time!

The first one is this one called “Kariyushi”. Our general young alcohol, 30°. – The next one in the middle is the “Ryukyu Premium” and it’s 5 years old! – It’s old sake, and premium! Then there’s the awamori that I introduced earlier, made with Okinawa’s local rice.

– Well then! Let’s savor! Cheers! – Kariii! – Yeah! It’s kind of sweet! – It’s a little sweet, but there’s a nice sourness to it, it’s sour, but also sweet and fresh,

– so even though it’s a young sake, it has an elegant, mature taste that’s quite nice! – Thank you! Well then, next is… the old sake!

– It’s so easy to drink! – Easy to drink and deep! ! – Thank you! – Oh my the aftertaste is great! This is amazing! It’s really delicious!

– Well, this is the depth of old awamori! The more you let it sleep, the more round and deep it becomes! – Like the taste of earth! – Well, this is probably my first time drinking awamori that isn’t made from Thai rice! – Me too! Let’s drink!

It’s so soft ! ! – It has a very gentle taste! – It’s 30 degrees, but I think it feels really light! – Yes! So nice! – Also, if you look closely, you can see that there are various kinds of liqueurs! – There are!

There’s passion fruit liqueur, and plum wines, like shikuwasa plum wine and red sweet potato plum wine! Then there is another thing called “spirits”. It’s a combination of awamori and black coffee.

– And I think you have another product that you’re really proud of? – Yes! Three years ago, I also started a whiskey business! – And here is some whiskey that I made! A brand called “Shinzato”! – Like your name!

– So cool! – May we have a little drink of this too? – Yes! Actually, I’m not a big whiskey drinker, I like alcohol, but I’m not a big fan of whiskey, BUT, I tasted Mr. Shinzato’s whiskey once in the past, and it was really delicious !

So as even someone like me who’s not fond of whiskey found it delicious, I really want you to taste it Christal! Oh wow, this gentle scent… – Delicious! – Delicious right!? – It doesn’t sting your throat! – Thank you!

It doesn’t sting your throat, and it doesn’t have the aftertaste of whiskey that I usually don’t like! Only a gentle fruity aftertaste remains, which is wonderful! It’s an awamori distillery with a long history, 177 years, so they’re making really traditional awamori,

But also trying new things, like using Okinawan rice, and I think it is definitely interesting for tourists too ! Actually, here it is! Ryukyu Awamori Distillery Tour! It’s not only a tour of each brewery, but also a variety of other content!

– That you can experience! – Experiences, like sightseeing in the area and so. In our case, there is a cafe also in Uruma City, Agari Mejo where you can try our awamori!

Awamori dates back to 600 years ago, introduced to Okinawa through South Sea trade, with the method of making distilled liquor, and it has been loved and nurtured by Okinawans ever since! So please, come and try Okinawa’s famous awamori! It might be fun to taste it why learning about it!

But also the local traditional performing arts, like Eisa! Also, something special is that we offer a barley tea roasting experience to help people learn about local ingredients! – A roasting experience! – That’s right!

– Can we start? – Please! – First, let’s light the fire and add the wheat we have prepared here! I’ll try it! It’s a mixture of black and whitish beans. The dark ones are already 90% roasted by us.

– You did some roasting first! – Yes! So don’t worry, there are almost no failures! – Oh, what a kind experience! – I heard like “Pop” now! – It started moving right away! – “Pop”! It’s moving! It’s moving! – How cute!

– Is it better to shake this sideways? – Yes! It’s about time you pick up the frying pan and shake it around! – Ah! It’s popping! – It’s popping! It just jumped! ! – Wheat looks like it’s in a good mood today! – Good!

This wheat was grown in Uruma City, where Agarimejo is located, in Ikeijima-Island. The cultivation of wheat in Okinawa was quite widespread before the war, but after the war, there was a shift to importing and most cultures went out of business.

Though, there is now a movement in this area, especially around the islands, to preserve the traditional calendar events, and the mayor of the Ikeijima area wants to preserve the culture of the island, and to use products cultivated here for traditional events

So not just to make offerings, but by developing various specialty products using the local ingredients, to be able to revitalize the island. That’s when I thought I wanted to do something to support them.

– so I decided to give this kind of experience at my shop, and talk about it. – To let everyone learn about it! – Is it the wheat we can see here? – Yes! That’s right! This wheat is the wheat of Ikeijima Island!

– Nowadays, it is called “Island-Wheat Kana-san” for the entire Okinawa prefecture. – “Shimamugi Kana-san”! ! – Yes! – Kana-san? – Kana-san! – Kana-san! – Kana from the studio!

It’s so nice to create activities that both young people and tourists can enjoy, while preserving the traditions! – But, well, when will the Awamori come out? – Sorry, I talk a lot! – No, no, I talk a lot too! It’s like I came here only to drink today!

– And this one is the second one, slightly darker roasted wheat coffee, to make this Awamori Barley Highball! – Yes! Let’s tart with the barley tea! The scent is really nice!

Nice! Barley tea is always delicious, warming you when hot, but it’ll also keep you cool in the middle of summer when cold! – and it’s actually available all year round! Natural, with a really fragrant taste! – Yeah! delicious! Awamori Barley Highball! What does it taste like?

– I wonder! Wow! What’s this! ? It’s funny! – It’s kind of surprising! The slight sourness and sweetness of the awamori and barley are like “dancing” in the mouth, there’s no other way to describe it!

  3. j'adore le dévouement des japonais à leur travail et leur organisation, comment ne pas avoir le désir d'y aller pour du tourisme ou l'idéal est d'y vivre faire une visite et déguster le thé d'orge serait un plaisir et voir l'usine comment fonctionne t'il.. etc est très intéressant et intrigant 😊✨🙏
