Hello from Sapporo! Suddenly, Hokkaido… is actually Japan’s top soba region! Among them, Horokanai Town leads the country in both cultivation area and production volume. Every year, the “Horokanai New Soba Festival” attracts soba lovers from all over Japan. This year’s final event was bustling with excitement as well! The vast soba fields swaying in the wind—what a sight. Soba grown on this northern land supports Sapporo’s unique soba culture. Even just in central Sapporo, a variety of distinctive, top-notch soba shops are concentrated in one area. This time, we’ll go from the north to the south side of Sapporo Station. We picked five shops without straying too far from the main line of the street in front of the station. From authentic, carefully prepared bowls to casual everyday soba shops… From places where you can enjoy soba before sake to long-established standing soba shops. Even long-established standing soba shops. We’ll showcase five different types of “Sapporo soba” in one video. We hope you’ll find your favorite bowl among them. Of course, there are still many hidden gems outside the city center… But this time, we intentionally focused on the city center. We’ll cover suburban and hidden spots in another episode. Now, let’s head to the first shop! Sapporo Station North Exit—the opposite side from the bustling South Exit. It’s a 9-minute walk from here—perfect for a leisurely stroll. The first shop is for those who want to savor meticulously crafted soba. If your main goal for visiting Hokkaido is soba, this place is for you—quite rare! It’s “Soba Kiri Harunosuke,” a soba restaurant offering limited-time menus. Harunosuke offers a wide variety of soba types, but… This time, we’ll introduce the limited menu available only on Thursday, Friday, and Saturday. The limited Mori Soba called “Shizuku,” priced at 1,400 yen. The soba used in this “Shizuku” is carefully sourced from specific regions. The main ingredient is Botan Soba grown in Shikaoi Town, Tokachi. This traditional variety has a delicate, fleeting aroma. Here, it’s slowly sun-dried to fully bring out its fragrance. Additionally, they use the Kita no Mashu variety from Teshikaga Town, near Lake Mashu. This type develops a richer flavor the more you chew it. They carefully handle each variety according to its unique characteristics. And using a slightly labor-intensive method called self-germination is what makes this shop unique. So this bowl isn’t just thin noodles… You can taste a subtle sweetness and a layered aroma with every bite. The condiments are simple: salt and wasabi. The dipping sauce is savory and slightly spicy, enhancing the soba’s fragrance and sweetness. Now… let’s dig in. First bite. The thin noodles are fragrant, and the flavor spreads as you chew. It’s smooth yet has a satisfying texture at the same time. Next, just a bit of salt. The soba’s sweetness comes forward, giving it a clean finish. Then, salt + wasabi. An aromatic accent is added, creating a more layered taste. And finally, the dipping sauce. The umami-rich sauce tightens the noodles and brings out their flavor. With each bite, a gentle sweetness reminiscent of soy milk or eggs spreads in your mouth. This is a flavor unique to the “Shizuku.” Such attention to detail makes you appreciate every aspect of this bowl. Finally, we finish with sobayu (hot water used to cook soba). Pour sobayu into the leftover umami-rich dipping sauce and sip slowly. This is… exceptional. The lingering aroma in your mouth gently dissolves. The bowl’s “profile” remains beautifully intact until the very end. Encountering such a refined taste feels like a small reward. That was the first shop, Harunosuke. Leaving this aftertaste behind, let’s head to the next shop. Next, we’re going to the south side of JR Sapporo Station. Kiri no Shita, Sapporo Apia branch. Located in the Apia underground shopping and dining area right by Sapporo Station, this soba shop has been around for 50 years. Previously, it was in Esta, long cherished by Sapporo locals. It relocated here after Esta closed due to Shinkansen construction. Being directly connected to the station, it’s extremely convenient! Many local office workers come here for a quick lunch during their break. The shop has 42 seats. A comfortable size that’s easy for families and groups to enter. The soba at Kiri no Shita… Uses soba grown in Taisetsu, Kamikawa Town, Hokkaido. They use fragrant flour stone-milled at a mill founded in 1922. The blend is adjusted daily depending on temperature and humidity. Freshly made noodles are delivered to the shop twice a day. It’s a “Sarashina-style” soba with a smooth texture and moderate firmness. The wide selection of donburi sets is also a popular feature. Today, we’ll try their popular Tempura Zaru Soba, 1,460 yen. Now, let’s dig in. First, a bite of just the soba. True to Sarashina style, it’s smooth on the tongue. Thin yet firm, with a subtle fragrance that rises instantly. The quality in an underground station shop like this is honestly impressive. Next, dipping it into the sauce. The “mori-tsuyu” is aged for two weeks, giving it a concentrated umami flavor. The sharp bonito flavor brings out the noodles beautifully. And now, the tempura. The batter is light, making it easy to enjoy without feeling greasy. The sweetness of the ingredients comes out as soon as you bite into it. Alternating with soba raises the overall satisfaction. The balance of this tempura zaru… Even a quick lunch can leave you completely satisfied. A quick yet fulfilling bowl… Having it near the station is truly convenient. Next, we’re heading straight into the heart of “real Sapporo.” Hinode Soba Odori Station, Sapporo Subway The moment you pass through the south ticket gate That “dashi aroma” that gently hits your nose If you’re a Sapporo local, you’ve experienced this at least once The source of this scent is Hinode Soba, founded in 1971 (Showa 46) For over half a century, it has been steaming and filling the underground with its aroma A long-established standing soba shop offering the perfect trio: “Cheap! Delicious! Fast!” That’s Hinode Soba Today, we’ll try the popular menu item: Tempura Soba Only 420 yen! At 420 yen, you might think, “Are they serious?”
But it’s a bowl that truly satisfies The speed—served in about 30 seconds—is part of the shop’s culture A dark broth with a strong aroma A Sapporo-style standing soba flavor with bonito and horse mackerel The noodles are soft, but snap pleasantly, making it easy to swallow The tempura soaks up the rich broth perfectly This “blending” brings the flavors together This isn’t tourism anymore—it’s “Sapporo life” It’s not gourmet you travel just to try It’s a flavor that has always existed in the city Personally… it’s my favorite among standing soba shops!     去年 カヌーから覗き込みました
    ちょっとジブリ風の不思議な景観ですよね

    そういえば幌加内や新得には食べに行っても、なかなか札幌市街地でお蕎麦を選びません
    今はなき札幌駅構内にあったお蕎麦屋さんが札幌で食べた直近お蕎麦だったかも

    どこのお店も趣に違いがあって魅力的ですね
    いつもは絶対もりそば派ですが、寒くなってきたので敢えてかけで温まりたいです

    ここ近年では市街地でなく近郊になりますが、長沼の「よのすけ」さんの十割蕎麦も美味しかったです🤤

    お蕎麦に小麦にお米にお水にと、大地からのダイレクトな風味がピカイチな北海道ですね✨
