You can take JR to Raioji Station 然後行13分鐘過嚟
Then walk by 13 minutes 我哋一年內來了兩次
We come twice in a year 首先睇咗春天

ASAHI-SHUZO SAKE BREWING 即係久保田的酒造
It’s brewery of Kubota 這裡真係好大
What a big brewery here 一落車就聞到好米香味
Full of rice aroma once take-off car 朝日酒造成立於1830年
ASAHI-SHUZO SAKE BREWING was found on 1830 到現在接近有200年歷史
It has a history of nearly 200 years. 最初係久保田屋創業
Initially founded by Kubotaya 酒藏坐落於信濃川支流
The sake brewery is located on a tributary of the Shinano River 涉海川河畔
Riverside of Shibumi River 我哋過去店那邊

Waiting for Kubota’s staff 帶我哋酒藏見學
Take us to see the brewery 酒藏嘅杉玉
Sugitama of brewery 就掛在這裡
Hang here 代表有新酒推出
Indicates the launch of new sake 但係顏色變了暗歇式
But the color has changed to dark 代表新酒接近售罄
Mean that the new sake is almost sold out 酒藏見學就要著這件衫
Need to wear this clothes for visiting brewery 保持衛生
Maintain hygiene 以確保唔會令到身上嘅不潔物帶入廠房
To ensure that no unclean matter from the body is brought into the factory 還要帶這帽
Wear this hat 好乾淨好衛生
Very clean and hygienic 這些米就發酵了2日
The rice was fermented for 2 days 加了酵母之後
After adding Yeast 就變硬了好多
Turn hard 這裡就是正用酵母發酵酒
Fermenting sake with yeast here 下面
At below 有泡泡
With bubble 試洗心
Taste SENSHIN Junmai Daiginjo 4月3日的
Bottled on 3rd April 味道好新鮮
Taste is fresh 好好味
Very good 我哋完成了工場見學
Complete the visit of brewery 朝日廠房真係好大
Brewery is very big 因為酒廠好多位置都唔比拍片
Because no video at brewery 所以只係可以睇到這些
So that’s all you can see 這裡就係清酒入樽嘅地方
The sake is bottled here 有3條入樽運輸帶
There are 3 bottle conveyor belts 黃色那部機
Such yellow machines 就將每盤樽放入運輸帶上
Place each tray of bottles on the conveyor belt 送去前邊入酒
Send it to the front and add sake 再封瓶
Then sealed bottle 全程不經人手
No human intervention throughout the process 而最外面那兩部機
The two outermost machines 就將入了酒嘅樽
and put the bottle of sake 放入紙箱
Put in carton 然後封箱
Then seal the box 跟住就可以推出市面賣
Then it can be launched on the market 工場見學之後
After visited brewery 我哋入去
We go 酒樂之里旭山

Because April is the cherry blossom season 所以我哋試

Experience Japanese paper (Washi) making 造紙導賞團
Washi-making Guided Tour 和紙的原料
Material of Washi 樹皮
bark 和紙就係用這樹皮來做
Washi is made by bark English name is mulberry 構樹收割之後
After the harvest of mulberry 會切成均勻長度
Cut into uniform lengths 跟住會放喺雪地嗰度曬
Sunbathing on the snow 喺雪地吸收陽光之後
After absorbed sunshine on the snow 樹皮會變白
The bark will turn white 現在手揸住這些就變白了
This bark has been turned white 再用水浸一晚
Soak in water overnight 然後再加梳打灰煮4小時
Add soda ash and cook for 4 hours 樹皮會變軟
The bark turns soft 跟住可以用手撕開
Can be torn by hand 跟住將水同榭皮放入這部攪拌機
Put the water and peel into the blender 將榭皮分解成細小纖維
Break down the bark into fine fibers 變成紙漿
Turned into paper pulp 做出嚟嘅和紙
Produced Washi 係日本嘅無形文化遺產
It is the intangible cultural heritage of Japan 這裡造紙
Making Washi 和紙就做好了
Washi is made 師傅要被取張和紙出嚟
The master has to be taken out a piece of paper 下邊個盆就係剛才的紙槳
The pot below is the paper pulp 現在這個就係做完出來嘅一張和紙
Washi is made 每一張和紙都要用心去做
Every piece of Japanese paper (Washi) is made with care 如果有啲小瑕疵
If there are some minor flaws 要攞把刀嚟移除佢
To get a knife to remove it 好似做腸粉
It’s like making ‘steamed vermicelli roll’ 職員再睇下和紙是否已定型
Staff checks again to see if the Washi has been set 跟住就成張拿出嚟
Then take out Washi 每一個動作都要好小心
Be careful with every move 和好用心
And Crafted with care 放入後邊這堆和紙上
And put on this side 然後移走這條簾
Then remove this curtain 臺面的和紙
Washi on table 就係朝日酒造
It’s for ASAHI-SHUZO 用來製作清酒標籤的和紙
Japanese paper (Washi) is used to make sake labels 後面這位員工
Staff at the back 就將和紙放在鐵板上邊
Place the Japanese paper (Washi) on the iron plate 曬乾了的和紙
For drying Washi 收翻落嚟
Retract it 跟住一張和紙嘅製作便完成
Making of Washi is completed 員工用這支棍
Employees use this stick 一次過黏起3張和紙
Glue 3 sheets of Japanese paper (Washi) at once 貼喺熱水加熱嘅鐵板上邊
Stick to the edge of the hot-water-heated iron plate 再用滾筒
Use roller 壓實每一個位
Compact every bit 讓和紙乾燥
Let dry Washi 如果咁大張的和紙
For the big Washi 就會用這個大掃來壓實佢
Ise this big sweep to compact it 這些係朝日酒造
This is for ASAHI-SHUZO 完成之後嘅七款和紙
7 types of Washi 現在造和紙
Washi making now 用這張簾
Use this curtain 跟住將這個架放落去
Put this rack down 跟住就將這個兜去兜紙槳上去
Put paper pulp on the tray 用同一個動作兜幾次紙槳水
Add it again & again 之後就要搖晃
Then shake it 搖晃上下
Shake up & down 跟住就要搖晃左右
Then Shake left & right 跟住就倒掉啲紙槳
Dump the paper pulp 又再兜紙槳張上去
Put paper pulp on the tray again 跟住就上下左右再搖多次
Shake up-down & left-right again & again 等佢定型
Then stereotype 跟住倒咗多餘紙槳
Then poured the excess paper pulp 浸多一次
Soak once more 倒掉紙槳
Dump the paper pulp 紙就定型
The paper is shaped 跟住就喺和紙上面加點裝飾
Then add some decorations to the Washi 再補少少紙槳嘅水
Add a little more paper pulp 去裝飾上邊
Over the decoration 要好小心移走這個架
Be careful when removing this stand 再黐一張紫色和紙上去
Stick another piece of purple washi paper on top 用手推實佢
Push it firmly with your hands 跟住就可以起張紙出嚟
Then take paper out 現在完成
Finish 我就開始造和紙體驗
It’s my turn for experience of Washi-making 職員全程喺隔籬幫我手
The staff help me in process 紙槳係幾凍下
Paper pulp is quite cold 加埋今日天氣凍
And today is cold 好佩服這裡員工
I really admire the staff here. 可以全日喺咁凍嘅紙槳內造紙
Making Washi on cold paper pulp under cold temperature 跟住我再加點裝飾
Add some decorations 跟住就要用好溫柔嘅動作
Use very gentle movements 補點紙槳去pattern上邊
Add a little paper pulp over the pattern of decoration 我張和紙就完成了
Washi-making is completed 這一下就是最巧功夫
This is the most clever move 這些大嘅和紙
Big Washi 這個盤就係造久保田酒樽的和紙
