This is the third store EIBUN Tsuboya, which opened behind the main store. The menus offered at each store are different, but EIBUN Tsuboya is a stand-up restaurant that mainly serves tsukesoba noodles. After moving to Okinawa, the owner , Eibun, trained at a long-established Okinawa soba restaurant and has a history of working as a chef in French cuisine and overseas. He is currently mainly involved in guiding and supporting staff. He talked about the current situation while reminiscing about his last interview and other memories. The third store, EIBUN Tsuboya, also serves as a central kitchen, and prepares backups for all stores. Previously, the place where preparations for the online store and the main store were done was now the second store, STAND EIBUN, and each store prepares its own food independently. Until recently, the cartilage part was often thrown away, but recently it has started to attract attention as being delicious, and the price has started to rise, and the number of stores using cartilage soki is increasing. OKINAWA SOBA EIBUN sells Okinawa soba at an online store that can be shipped nationwide, and Okinawa soba that comes with a set of noodles, soup, and ingredients is popular. Juicy is cooked. Okinawan rice dish "Juicy" with various ingredients. Inside the store like a stylish cafe. Okinawa soba ordered from the online store is packed and prepared for shipping. The third store, EIBUN, opened in September 2024. Tsuboya is a restaurant where you can enjoy Okinawa soba with a tsukemen taste, and offers hot Okinawa soba as well as cold dishes. In addition to soki and sanmai meat, you can also enjoy dishes using duck meat. Hot Okinawa soba with all the toppings, including hon soki, broiled cartilage soki, makanai meat and duck meat, is served with two types of hot Okinawa soba, "TSUBOYA soba" , black soy sauce and original flavor.
