there is a city in Japan that once dominated the sake industry over a thousand years ago can you guess which one it is here’s a hint it’s a city that’s filled with deer with some serious bowing skills let’s all right let’s go see you guys in the next [Music] place that’s right it’s NADA known for its adorable and Incredibly polite deer and it’s very long history of Saki Brewing due to its connection to Shinto and Buddhist traditions because it has over 3,000 temples and shrines and N is actually the capital city of Japan way before Kyoto even was so today I’m going to take a sip of NADA history where sake spirituality and history seamlessly intertwine so let’s go explore NADA and get me some sake first let’s explore omiwa Shrine this Shrine is believed to be the oldest Shrine in Japan and it’s also known for its special connection to sake because they make something here called sugama which are spheres made out of Japanese Cedar and they are hung outside of Saki breweries and the Spheres that are made here at fish rineer actually used all across Japan sake is significant at Shinto shrines because it is used as an offering to the gods at sake breweries a fresh green sugama represents a brand new batch of sake available and over time the sugama gradually turns brown which signals the Aging of the sake just like this one here so now let’s head over to a local sake Brewery and have a taste of sake history let’s go [Music] it is now time for me to try some sake so I’m here at nishiuchi Brewery which was founded in the year 1877 so it’s got a very long history of sake making they also have two award-winning varieties of sake here so not only is it historic it’s also world-renowned and you can also see here that they have some sugama that were made at omiwa Shrine this is also my first time seeing a green one in person which shows that they have some new sake in right now and they also have some aged [Music] sake [Music] [Music] for [Music] it’s really hot in here it’s kind of like walking into a sauna so just so you guys know it’s normally you’re not allowed to enter these rooms because they’re actually growing the Koji mold uh the bacteria cultures so you do it’s not really a place people can enter but just for this shoot we’re able to see what it looks like inside and it’s really cool but actually a little bit hot [Music] you can kind of smell the scent of of sake it’s a little bit different it’s hard to express but you can smell this kind of Sweetness in the air let’s go try some amazing [Music] Sak wow a very traditional [Music] room she so all right so let’s give this a try some homemade sakias musu saki kasu is the saki Le M that is so good that is a very unique dessert honestly the first hit of flavor that I get is this incredible Yuzu Jam and the mousse itself is so fluffy it’s got this really delicate flavor it’s just fluffy creamy and it goes very well with this citrusy jam now that I’ve had a bite of the sake mousse let’s try this incredible looking strawberry M that is a very good [Music] strawberry all right let’s give this a taste this is a sake that represents the goddess canon in this region cheers it’s a very layered taste at first you can taste the rice almost the sweetness of the rice but the aftertaste is a little strong you can feel more of the alcohol in this let’s give this a taste of fresh non-aged sake oh wo that’s super sweet like incredibly sweet it’s almost like drinking a syrup um but you can taste the alcohol in it as well oh interesting right off the bat I wouldn’t say that it tastes like I ate a strawberry but I can see that there’s some kind of a connection between the type of sweetness that a strawberry has okay let’s see how it matches with the strawberry M well that is very good the strawberry after the sake what a great balance they’re both kind of tart and sweet really fantastic well I’ve had a chance to try a bunch of really fantastic sake today but next I’m going to go explore the town a little bit more and maybe check out a historic temple and maybe have a bite to eat so I’ll see you guys over [Music] there I am here now at the Shing G Temple which was established in the year 712 and it’s said to house a 2 m tall statue of an 11 headed goddess called Kon so let’s go inside and learn more about this Temple and also see this incredible [Music] [Music] statue we’re going in for [Music] this Temple also has a cafe attached to it they serve a local Narada dish called kakin no haushi let’s go inside and give it a [Music] try what a beautiful Cafe it’s more like a tea house and look at this incredible View you can see mount miwa in the distance which is considered to be a God or deity of the omiwa shrine I am now waiting for my local NATA food which is called the kakoa Zushi and I cannot wait to try it I’m also going to get a cup of matcha tea just because we are in a tea house let’s start with the star of the show we’re going to have the kako haushi the mackerel or Saba in Japanese oh this looks amazing so this type of sushi you do not need to put soy sauce on it because it has been preserved in vinegar so it already has a lot of flavor to it and you can eat it with your hands as is very common with sushi in Japan M it’s really delicious you get a really big kick of vinegar but it’s also a little bit sweet the Saba mackerel it goes really really well with the vinegar I’d say it’s a really fantastic sushi probably different from anything you’ve ever had abroad that’s for sure so let’s try the salmon the color is so beautiful M that’s also really good interestingly the Saba or the mackerel had a bigger kick of flavor this one the salmon flavor is a lot more subtle but it is really vinegary kind of sweet sour and really refreshing all right let’s try try the soup what’s really interesting to me is the fact that it has noodles in it m I really love noodles I’m I just love noodles pasta it just gives it a little bit of this extra bite and chewi along with the seaweed it’s time for my dessert and tea time I’m having some matcha which is called yam matcha and this this is a locally grown type of matcha tea so let’s give it a try oh that it just really warms you up it’s a type of tea that is naturally a little bit on the bitter side but when you can appreciate the depth of the flavors it’s a little bit grassy um and I feel like it really matches the scenery here and that’s where you come to a temple to enjoy all right now that I’ve had a wonderful meal I think I’m ready to go discover some more sake in this city see you guys at our next spot I am here now at K shuzo or k Brewery which was founded in the year 1718 and it has a history rooted in patience and Perfection and if you notice here they even have a sug Dema that was made at OMI Shrine and it’s a little on the green side so they must have a fresh batch of sake Brewing inside and I hear that they have some sake that were made using historic Brewing method so I’m hoping to try a very historic Taste of sake today let’s go [Music] inside let’s go inside wow this place is beautiful [Music] for all right let’s check out the COI room w [Music] for [Music] so this is a type of a level of sake called jum GJ the rice has been shaved down to 60% and the more of the grain that you shave the clearer the sake gets so let’s try the d% one made in a traditional method using food rice instead of sake grade rice here we go come bye ooh that is so smooth that’s so good it’s actually very fruity it’s very tasty and quite on the clear [Music] side [Music] oh this one has much more of a a light and acidic flavor to it it’s very refreshing a little bit sweet and easy to drink all right so next I’m going to try a sake that’s made here using a more modern production method but this one is very unusual because it is made with a 20% alcohol m ooh okay that is pretty strong and it tastes a little bit more reminiscent something closer to a VOD cut it’s a little on the the sharp side but it’s still smooth let’s give it a try here we go our last sake here come by oh that is totally different from all of them incredibly incredibly light and clear so they’ve shaved everything off of that Rice grain so you lose all of the proteins and you’re left with something that’s so clear like water super delicious all right I’m going to head over to the standing bar where I can enjoy food and Japanese second pairing that is made right here so let’s go over and check it out all right my last stop is here at kashihara Jingo station and it’s actually owned by the K Brewery that we were just at and they have a really cool standing bar inside where you can drink Japanese sake and it’s called miiku which is actually the name of the sake that we just tried at K Brewery this is a place that holds a lot of events for tasting Nara sake if you’re interested in trying those and you can do food pairings so let’s go inside and check it out it’s at a train [Music] station Oh what a beautiful and modern standing saki bar what’s really cool about this is you can actually enter from outside of the station which means you don’t need to pay for a ticket or you can enter from the inside of the station so if you were riding the train you can also just pop in for a quick drink or a bite to eat oh it’s so convenient you can hang everything up on these little hooks underneath the counter so I’m going to be ordering a sake and food pairing set but it’s actually not available on the [Music] menu [Music] first I suppose we should start by taking a sip of the D Joo cheers everybody come by oh my goodness that was the smoothest of them all it is the perfect amount of of sweet and smooth and clear that is a delicious glass of suck you could drink it straight on its own but why not try some food with it I would never really have thought to pair a highgrade sake with Smokey chicken before let’s give it a [Music] taste M oh that is so good the smokiness you can really get that Char grilled flavor but there’s a lot of fat the oils kind of ooze out over your tongue and I think that’s what is going to match with this very smooth sake M that is so nice the sake kind of cuts through the oil and the fat on your tongue but it also compliments it it’s like a it’s a Harmony in your mouth but now let’s try the [Music] cheese mhm I think for some reason I expected it to be sweet there’s like a hint of sweetness but you also get this really unique flavor that is sake Leaf there’s a little bit of bitterness to it and you can also smell the fragrance of [Music] sake M that’s really good you know what happened with the bitterness of the sake Lea masked by the sweetness of the sake itself it Blends out into the this beautiful harmonic sweet cheese at the end after taking a sip of the of the sake another fun fact about this bar is that the water here is supposed to be really delicious the reason is because it’s called shikomi water shikomi water means that it’s water that they use to make sake and sake can only be made with really really pure water let’s give it a [Music] try oh I mean part of me was just expecting regular water which it it is it almost just has no flavor at all it just disappears it’s super super clear and I guess that’s why it’s important for making sake you can’t have like a base flavor in your water it should taste like nothing so I mean you can come here and try the water super clear and that’s why you can make sake that tastes good all right well that concludes my day here in NADA this was such a fun experience and I learned so much about sake it’s a kind of a off the beaten path destination it’s not overrun with tourists as Kyoto is so if you want something that’s a little bit less crowded and full of tourists and I think NADA is the place for you it’s so rich and full of History the sake is delicious and you can feel that connection between sake and spirituality and the importance that sake has for the local people here culturally and kashihara jingu station is very easy access to all major parts of Kai region including Osaka Kyoto and Yoshino so I think this is definitely a must
