ここは中国のグルメの首都?シーズン2、エピソード123

if you ask me where to find the best food in the world i’d say China from north to south every region has it’s own flavor just to give you for examples Cantonese cuisine is light and fresh Sichuan is spicy and fiery Xinjiang is bold and rich in spices yunnan cuisine is colorful and wild but if you ask me where to find the very best you can’t skip shunde a district in foshan and the soul of Cantonese cuisine the landscape here is quite boring to be honest but the food is another level from delicate dim sum to melt in your mouth roast goose to silky Cantonese desserts every bite is dangerous and you won’t leave Shunde without gaining two pounds so today i am in one of the tastiest cities in China ready to walk eat and probably grow heavier good morning everyone welcome back today i am in a city that is at the very heart of Cantonese cuisine and a place that is an outstanding representative of Chinese dining culture this place is called shunde shunde is also known as a cradle of Cantonese cuisine because many chefs of Cantonese cuisine are from here so this video is mainly about food and Flo and i are prepared to try different kinds of food here but meanwhile we might go to foshan to see the dragon boat racing because the dragon boat festival is coming soon and it’s a very important tradition here and today’s weather right now it’s quite sunny but many locals told me now it’s the so-called longzhoushui time and it rains a lot before the dragon boat festival and it can rain at any minute baobao can actually walk again so the good news is that i am now recovering i still can’t walk for a long time and i still have trouble going down the staircases but i do feel that i am getting better every day and it’s time to train my muscles i really look forward to the time when i got much better so that we can start the new season right yep season 3 traveling the ancient silk road in case you have missed it and we’re in the midst of preparation so yeah i don’t know i don’t want to i don’t want to spoil too much but you will get an update soon I’d love A egg rice roll And one grilled pork rice roll thanks Ok, two 好的 that is really fast we came to this little changfen shop in our neighborhood and they are making changfen on the spot we order three different dishes Flo is enjoy watching this cooking show so the way they make it is very easy so firstly she spray some oil onto the pan and then scoop out some rice milk it is made with grind rice with water and then she spray it evenly onto the pan and put some onions meat egg and then push the pan into the steamer and steam it for a minute or so the name changfen came from the the shape it looks like the pig intestine hence the name changfen there are different kinds of changfen and this one is called Fuyun changfen and the skin is very thin it’s wrinkly Changfen self is very bland so you always need to pour some soy sauce on the top to give it more of a savory flavor it’s so stretchy and tender it’s a really delicious breakfast skin is so thin it’s almost transparent five yuan for plate of rice rolls this is the most common breakfast you’ll find on the streets of shunde after breakfast we turned into a nearby market it’s late May and leeches longans and bayberries are all in season every bite tastes like summer this is waxberry a very typical Chinese fruit i’ve never seen this in Europe for example because the fruit is very hard to preserve try one
baobao Thanks baobao it has a very special aroma it’s a mixture of sweet and sour but very nice 龙眼 you can bite to open it and the flesh is a bit transparent it looks like a piece of Jade do you like it? it does have a special fragrance and it’s sweet i really love it i love the fact that there are a lot of mango trees on the street you basically have access to all those free fruits today is Saturday the streets are packed with people coming to shunde for the food almost every restaurant is full and there are long queues everywhere there are lots of Lao-zi-hao here places that have been opening for decades we’re going to get some Cantonese dessert and this is a traditional shop we just got our ticket there are seven tables ahead of us this shop is so popular people are waiting outside looks quite amazing i actually would like to order everything for one time to try the menu is insanely long it just keeps scrolling there must be over a hundred options our dessert came really fast we ordered five different kinds the milk pudding black sesame rice roll sesame almond soup double skin milk and mango pomelo sago this is a star dish of the restaurant double skin milk it’s a very typical Cantonese dessert it is served warm in a very nice bowl like this hmm it has a silky milky and very smooth texture this reminds me the German Marzipan the almond paste you can try that It tastes like When I coughed as a kid My mum would give me medicine this taste It tastes like it, for real unlike many western desserts that are rich or sugary Cantonese desserts are often mildly sweet and easy on the stomach they are based on traditional Chinese medical ideas and focus on health and balance black sesame can nourish hair Almond is good for the lungs mango and coconut have cooling effects they may look old school but they have passed for generations a dessert here isn’t just food it’s a taste of history if you’re asking for one advice that is don’t come here on Sunday it’s just so crowded and many shops has a long queue we also tried some traditional biscuits with Almond peanut or sesame flavor they look like British shortbread or butter cookies but unlike western cookies that often use butter and chocolate they are made with pork fat or simply oil the street is called Jinbang street it’s a snack street with all kinds of local treats such as Cantonese style beef offal grilled fish zongzi, i.e. traditional Chinese sticky rice wrapped in leaves but what it best known for its dairy products fresh milk double skin milk and the special Cantonese cheese sold in bottles cheese is rather a very uncommon product and in Guangdong province here there is a special cheese so she’s scooping some hot water from that pot and mix it with some some milk and then use a finger to press it down onto that wooden piece That is vinegar This vinegar Milk, and this salty water, and it turns into curd I see That’s vinegar and milk But how to eat it? If you bring it home It goes with porridge With other food It has to go with other food I see
It’s too salty if you eat directly Better eat it with rice And porridge And even soup Soup Or dry noodles You can… (talking in cantonese) we just came to this random restaurant in our neighborhood that sells a signature dish called ganzhengpaigu the dry steamed rib but this shop’s signage is so funny it’s written Shunde catering industry Dry steam research and communication center which means a research and communication center May I ask why it is called A research and communication center So if you’re interested You can come to our shop And we learn together That what it means To be frank Our dry steam dish Is in shunde A very known technique In shunde, dry steam is A very traditional technique It’s a traditional dish You might be more Used to Water steam But we don’t use any water We leave the dishes in the wok And dry steam Dry steam And in that way It might not look very different But it tastes very different The juice in the meat Is sealed inside It has a crispy skin It’s crispy But the inside is Very juicy there are constantly people come in to take a order and the restaurant owner is just so chill sitting in front of the kitchen and write down everything on this small note thanks It’s hot I see wow it’s just sizzling baizhuoshengcai is a typical dish here so they quickly boil the lettuce in water for a few seconds and then season with some sauce it’s a very easy dish it’s very tasty Do you like lettuce? en so he said this technique is called Ganzheng which i think is more like bake so the flavor is very well trapped in the meat we really enjoy every bit of it we finish all the dishes and Flo even makes the sauce from the lettuce or the rice and he is now cleaning the the bowl inside the restaurant there are also some lion heads i just talked with the restaurant owner he said it’s a very important tradition and he also used to be a part of the lion dance team So the lion head in the restuarant Did you practice lion dance? The lions are My personal hobby I also lead a Lion dance team In shunde A small group And now Do you still do lion dance during the spring festival yes hahaha now
Those are How to put it They’re retired lions The lions Are too old to play now The lion head Let’s say We hang them to show our respect Because we feel The lions And dragons are sacred So we can just throw them And let others pick them up from the street Or like that Like this And after dancing with it for a while Will it retire They are not immortal And til They get too old To play with Too worn out And then We take them To our The temples Do you know that Where the deities are worshipped To burn it Like that So you’ll have to burn it yes It’s a ceremony If it is like this Like what we have The color hasn’t fade Or it’s not worn out We respect it And hang it Like this I see It’s part of our culture aside from the traditional lion dance Foshan has another big dragon boat racing it usually takes place during the dragon boat festival and in the lead up to the actual race the teams are busy training hard that evening we took the subway to diejiao in Foshan to check out the night training sessions we were shocked by how popular it was the narrow alleys were packed with people locals had already claimed the spots by the river early on setting out stools to save seats we walk around the area so many times but couldn’t find a single place to sit we have been walking outside for a very very long time and we almost gave up on finding a seat but then we met that lady i think the foshan tourist office really did a really good job so finally we got a place to film and i think in front of me it’s all people who are living here i want to show you how crowded it is So winning the race For this race Is winning important I know it The goal isn’t the money They race the dragon boat For honor Cantonese and I couldn’t understand We can row the boat broken But they can’t be slow hahaha row too slow, you’ll be sent back to kneel in the ancestral hall! So rather to crash it Or tip over yes
Rather risk breaking it And be fast Yes, row fast And fight for the honor I heard the dragon boat Are very costly Is that real yes (cantonese) Can I speak cantonese? yes The whole boat Costs more than 100k yuan Can you help me to translate? I didn’t get it hahaha It is The whole boat From head to tail everything Costs about 100k yuan wow so the boat has to go to the other end and then turn around and do a L turn at this and that’s the time when they are very likely to tip over over the wall it’s not just about speed the most exciting part of a dragon boat race is actually when they make the turns that’s when things get wild sometimes the boats crash into the banks or even sink and if one of them loses its dragon head the crowd goes absolutely crazy and that’s what everyone’s really waiting for after soaking up all the excitement Flo and i headed back to Shunde and wrapped up the night with a late night meal and usually in China the best restaurants are those that looks the least fancy so here it is wow, it’s packed How many of you? Two. Are there still place? ok this restaurant is so busy and we got to pingzhuo so we share a table with two neighbors they just got a goose where are you from? hunan And you? Are you here to check it out too? He works here I come to visit him And have a rest How do you like the goose yes It’s much better than the ones in Hunan The one you get from Meituan delivery hahaha at one corner of the restaurant they’re making the roasted goose so the goose is marinated and air dried and cooked slowly over the fire in that pot we got three different dishes on the table so the first one is porridge with some seafood and the second one is the most famous roast goose and the last one is a regular stir fried lettuce with garlic but before we start there’s one thing about very special about guangdong province so it’s not by default that you get tissues um so you can buy them of course but everybody brings them themselves including us we got it from the hotel so now we can start the porridge is quite flavorful you can really taste the white pepper and there is even a hint of the sweetness of the seafood just want to show you that the duck is so well roasted all the fat came out and the skin is just like a piece of paper oh my god this is so delicious baobao, from 1 to 10 How do you rate the roast goose I’ve no idea 20 I think, there are many more tasty roast goose in Shunde yes Very yummy

  1. I love classic Cantonese desserts they have the right balance of taste and sweetness whereas the "modern" cakes and breads are toooooooooo sweet

  2. You are basically reintroducing me to the foods of my childhood my parents used to make in Toronto Canada were I was born and grew up. Looking forward to your Silk Road adventures.

  3. Yan; you and Flo could got wealthy just starting a food export business where you freeze different meals for us to order to export and try abroad and , may I compliment Flo’s mad chopsticks skills; I do well with them but have never mastered eating rice with them with Flo’s skill level! It was great to see you back on your feet Yan and I can’t wait for the Silk Road season 3 I’m looking forward to next week!

  4. This is the best video so far l like food but Chinese food and looks delicious and are different varieties than the takeaway here in the UK the goose looks good but l have to be careful not to eat a lot of fat due to a heart attack a few years ago is any Chinese food is fat free? Some Chinese foods looks amazing and nice to eat.The dragon boat race is pretty awesome . I hope you recover well .

  5. I have to agree with the famous Julia Child and throw my lot in with Beijing food. It is definitely the most pallete friendly place for westerners to start.

Fun fact: Julia met her husband in Kunming.

My wife is currently working in Guangdong, and southern food is hit and miss. Yeah, that is picking a fight.

  6. 小時候被爸媽帶去看龍舟賽,長大後覺得正中午太熱了,幾十年沒去看划龍舟。
    廣東晚上划龍舟,氣溫比較宜人。
