These small, mom-and-pop shops always hold a special place in my heart since the days in Vietnam, then Plainfield, NJ, then the shops on Commonwealth Avenue in Boston.
What I love so much about Japanese cuisine is that it insists on freshness. I love it how everything is made fresh in the morning in preparation for lunch hours and dinner hours.
Wow I really like how cheap the lunch is, especially the bento boxes that is $7.10. I would have to visit there whenever I visit! On the other hand, my joints ache whenever I see self-owned, restaurant owners work hard like this, brought back some memories where my family once owned several buffet restaurants and we made everything from scratch where people would take advantage the fact that it's a buffet so they can waste all the food they wanted to.

丁寧な下ごしらえから、開店後の厨房、ホールの完璧な役割分担により料理を素早く提供されているのが見て分かります。
大将の鍋さばき、従業員の麺の湯切りと丁寧な盛り付けに地味でありながら確実に料理を作るプライドを感じます。
お客さんもこの店の常連の方が多いみたいで、通えるのが羨ましいです。
物価高騰により大変でしょうが、お客の胃袋を支えるため今後も頑張っていってほしいものです。
