Yamato Koji Park is a fermented-food theme park and working brewery operated by Yamato Soy Sauce & Miso Co., Ltd. in the Ono district of Kanazawa. It showcases the traditional production of soy sauce, miso, amazake and other koji-based foods, and offers a fun, interactive experience about fermentation culture. 
What you can do there
• Factory tours – Walk through the koji brewery and learn how soy sauce and miso are made. 
• Workshops & experiences – Participate in experiences such as miso-making (seasonal/limited), salt-koji making, and more (some require reservations).
