[music] It’s very different. [music] Good morning. Got these gorgeous mountains behind me. Today we are leaving Scardo for a little bit and we are going to another place called Coplo and I think we’re going to see some of the village life, local life. I am wearing my shower kamise and I look more like a local. Yeah. So, let’s get this new adventure on. We had a 3-hour road journey to the next [music] city in the beautiful mountainous Baltistan region of northern Pakistan. This route was very scenic with pockets of little markets and so we made pit stops throughout the journey. >> Tea time. Supposedly, this going to be some salty tea. I don’t know that I’ve had salty tea. >> It’s a special balty chai. >> Special balty chai. >> Namkin chai. We say namkin chai. It’s salty. >> Namkin chai. >> Green green leaves. >> Okay. >> Green leaves. >> After mixed, we put salt, little butter and milk. >> Okay. >> Everyone use at the breakfast this tea. Okay. >> In the whole Baltistan. In the whole batistan >> it’s salty. >> It’s very different. >> Very different. Yes. >> Very different. So the culture >> taking a piece of paratha. >> Then roll it. >> Yes. >> Like that. And then dip it into the tea >> and let it sit. >> Yes. >> Soak it up. >> Okay. [music] >> [music] [music] >> We just got to Ali’s home, his mother’s home, where his mother and his sister live. And we got invited for a local lunch, which I’m so excited to have some local food. what I do. >> So, this is traditional Balti food and she’s cooking bread. What is the name of the bread? >> Roti. >> Roti. And oh, I love the >> I love the oven. Apricots are really big in this region. >> We have a soup made with apricot and then a traditional dish made with apricot. This is wheat and and then apricot seed. >> And then what’s the cream? The cream is called muscot. >> Muscat. And the muska is made from the apricot seed. >> Lapu it’s called. Interesting. >> She’s making it hotter. >> And the bread is like sitting in the sand. Yeah. The ash. >> She’s blowing into it to make it the fire more. [laughter] >> So everything that she’s we’re going to eat here today is from her farm. >> Comes from her farms. Yes. So she has apricot, wheat, what else? >> Potatoes. >> Oh, the seeds are in there. >> One of the sisters, she’s cooked something special for me. Now she’s does not want to be on camera. So I will not show her face. >> Casir. >> Yes. When I also make tomato. >> Uh-huh. Green leaf vegetable. Okay. And then this is called what is it called? This >> this is >> cir. Okay. >> Yes. In soup we made >> our local wheat. >> Okay. Looks like there’s all kinds of vegetables in it. >> Apricot oil. >> Apricot oil. M >> yum. Okay, this is where we’re going to eat. Wow, look at all the food. >> Wow, it’s a feast. So much >> toar. We say toar >> tasar. >> Toar. This one is >> you can say it is a balty pizza. >> Balty pizza. >> Yes. >> Okay. >> Tres ble. >> Tres bal. >> And marzan. >> Marzan. >> Marzan. And >> this is And this is zen. So we mix it. >> Marzan. Okay. >> This one is plu. >> Plu. >> Apricot soup. >> Apricot soup. >> Alo. >> Alo. >> Yes. >> Potato. All right. So, you take two to three pieces. They said depending on how hungry. >> Yes. >> You put a little bit of apricot oil. >> Yes. >> And put it on top of it. >> Good. >> And you mix it like this with your fingers. >> With your two fingers. >> With your two fingers. >> Yes. >> The papu. >> M. M >> that’s good. >> Good. >> Mhm. The oil makes it sweet. >> You do this first. >> Uh-huh. >> And when it become a ball, you rotate it with your fingers. And when there will be a >> a hole, then >> eat it. >> Okay. So, first >> make a ball. >> Make a ball. it. Yeah. >> And then >> makeup. >> I’m doing it correct. Yeah. >> Okay. >> Yes. >> And then scoop it. >> So now we’re going to try the soup with the She made the noodles from scratch, too. >> Ballet. >> Bal. >> That’s delicious. >> Delicious. tomatoes, onion, garlic, >> apricot soup, >> they say this is a little bit sweet. Oh, it’s like pure apricot. >> Yeah, made of >> That’s good. >> It’s delicious. How do you hang it? >> So, she was saying that outside her house, she has a bunch of apricot trees. And so, during harvesting time, they take all of the apricots and they use almost every single bit of it for something, the soup and the food and the dishes, and they crack the the the hard shell, the nut in the middle to make the oil, and they put it all over the food. And then the shell of the nut they give to their animals during the winter. So nothing goes to waste and it’s delicious. >> Okay. [snorts] >> Uh bakish [laughter] >> for the delicious food. Thank you so much. It was so much and so delicious. and your you and your daughter and daughter-in-law are very very good cooks >> and and thank you for um having me. [laughter] >> Come every day for me. >> Come every day. >> Okay, no problem. [laughter] >> Okay, now we’re [music] going to go check out the village. >> Cute. A. So in the basement they keep the goats and the chicken [music] and the sheep. And then upstairs is where the house is. A getting a [music] a quick little village visit which is kind of neat. Everything is made of the stone. So [music] that’s some extra grain for the animals and they they have it high up in the tree so that [music] it stays safe. Nobody will eat it and then they use it during the winter. There’s no more grass for the cattle. >> That’s all. >> Oh wow. >> Yeah. This is where they keep the machine that they make the wheat. They turn it into [music] flour and then they also have the machine that they make the seeds and turn it into the oil. This is the seeds put in there and then extraction machine. >> Got it. Oh, the oil. Yeah. [music] >> So pretty. And then this is just a canal of irrigation for the fields. They’re having the last harvest of the season and it’s barley. So, they’re harvesting it right now. We’re going to go see. Check it out. Oh, the mountains. Just love the mountains. >> She was carrying beans. Corn. This is barley. M I don’t think I’ve ever seen barley grown barley >> make a bal of barley also >> floor of barley. >> So the trees back there all the way there are all the apricot trees. Now, these the corn, the peas, and the barley, they have about 2 weeks left of harvesting. Then, after they harvest, they bring all of their cattle back into this area, and the cattle can feed on the remainder of the corn and the barley that’s on the ground. And then once this is over and it gets cold, then they bring the animal back to the homes. Hello, Yeah, wood. Yeah. And just [music] put it down. [laughter] >> A goat. [music] He’s holding a goat. I was invited into a Balti home for lunch while traveling from Skardu to Khaplu in Northern Pakistan.
This stop in Baltistan gave me a close look at traditional Balti food and village life high in the mountains.
This is Episode 3 of my Northern Pakistan series, following our journey from Skardu to Khaplu. Along the way, we stopped in Dahoney, where my guide’s mother and sister prepared a full Balti lunch using ingredients from their farm.
Before the village, we passed local markets and stopped for Balti chai, a pink, salty tea unique to this region of Pakistan.
Inside the home, I filmed the cooking process and enjoyed dishes made from apricots, grains, and fresh farm ingredients. After lunch, we explored the village and nearby fields, seeing how flour is milled and apricot seeds are ground — a rare glimpse into life in Northern Pakistan’s mountain villages.
