Kuncho Shuzo is founded in 1799 坐落於江戶時代遺留落嚟嘅
Locate on a legacy from the Edo period 原屋倉庫舊址
Former warehouse site 這間300幾年嘅釀酒廠
At this 300-year-old brewery 門口這個酒林係特別大
The sugidama at the entrance is particularly large 仲可以俾你親手摸到
You can touch it 酒藏見學就喺酒藏資料館內

The winter climate is extremely cold 係非常之適合釀造清酒
It is very suitable for brewing sake 這些係江戶時代嘅小擺設

Due to the abundant water resources of Hita City 因此係有水鄉日田嘅稱呼
Hence the name of the water town Hita 就係用英彥山嘅伏流水造酒
It uses the underground water of Hikosan to make sake 喺酒廠內挖掘咗一個130米深嘅井
A 130m deep well was excavated in the brewery 去抽取這些地下水釀酒
To extract these underground waters for brewing 鏡開酒桶
Kagamikai sake barrel 酒藏由5位藏人
The brewery is leaded by 5 Kuroto 組成團隊造酒
Forming a team to make sake 由一位擁有40多年經驗嘅資深杜氏領導
Led by a senior master sake brewer with over 40 years of experience 學習室

There is Sochu making 麥燒酎和芋燒酎都有
Both wheat shochu and taro shochu are available 原酒清酒
genshu sake 造個櫃就全部都係清酒
Here are sakes 這裡就有介紹清酒釀造過程
Introducing the sake brewing process here 首先係精米
Firstly is rice polishing 將粒米磨走幾個%
Grinding away several percent of the rice grains 蒸米
Steam rice 即煮飯
It’s cooking rice 跟住就製麴
Koji making 加酒母
Add Shubo 開始發酵
Fermentation 就會上槽
Joso 壓榨
Pressing 壓榨出嚟
Pressing out sake 有兩樣嘢
Into 2 stuffs 一啲就去咗造酒
One is extracting as sake 另一啲就去咗做酒粕
The others is making sake lees 酒粕就可以煮嘢食
sake lees can be used for cooking 酒就飲
Sake is for drinking 然後再用高溫消毒
Then sterilize with high temperature 60至70度加熱
Heating to 60 to 70 degrees Celsius 殺菌
sterilization 然後就儲存一段時間
Then store for a period 就可以入樽
Bottling 就可以賣
Then sell on market 酒藏資料室
Sake museum 存放由昭和30年至今
Stored from Showa 30 to the present 擁有190年歷史嘅造酒工具
Brewing tools with a 190-year history 這些就係以前造酒嘅酒桶
Previously brewing barrels 製麴嘅盤
Tray for koji making 頂級清酒就用這些細盤嚟製麴

In this episode, we’ll share our experience in Mameda-cho, Hita City, Oita Prefecture, known as “Little Kyoto of Kyushu,” including a visit to the Kaorencho Sake Brewery’s museum, and opportunities to buy and sample sake.
Hita City’s prosperity dates back to the Edo period, and Mameda-cho is a premier tourist destination, preserving its historical culture and numerous late Edo-period buildings. It has been designated an “Important Preservation District of Traditional Buildings” by the Japanese government.
