Deep in the mist of the Ganges, Varanasi’s morning slowly awakens. The river, laden with monsoon rain, is murky, its fast-flowing waters imbued with a weight worthy of its mythical name. Its sheer power makes one want to distance themselves. Yet , as always, people were seen along the riverside. A man praying with his hands on his forehead, an elderly woman carefully washing a cloth, men muttering to one another. In this town, prayer and daily life are in the same breath. As the soft morning light splashes on the water, the tense atmosphere gradually eases. Let’s step out into the town’s alleys. What awaits Varanasi after the rain ? The Ganges shrouded in mist. Another quiet morning has arrived in Varanasi. Good morning. India’s rainy season. The monsoon arrives in this town around June, dumping abundant rain that rapidly swells the Ganges. The Ganges, the river of the gods. During the rainy season, its flow is swift, its murky surface gliding past before our eyes. Its flow, “keeping out all,” offers a glimpse of its awe-inspiring and noble presence . Nevertheless, people still visit the Ganges today. Some draw its holy water and bring it home. It ‘s used for offerings, prayers, and home purification. Here, a person prays with their hands clasped together in earnest. As if in response to their prayers, the soft rainy season morning light gently splashes on the water’s surface. On the bank, an old woman is doing laundry. The pleasant splashing of water and the sound of cloth hitting the stone are a part of the everyday morning craft that has endured in this town. Now, let’s go for a morning stroll. At a stall along the Ganges, a friendly man makes idli , an Indian steamed bread. It’s served with a generous amount of coconut chutney and a sprinkling of mustard seeds. A mellow flavor with a gentle acidity. Delicious! This is “Uttapam,” a thick dosa. It’s made from a thick batter made from fermented rice and urad beans, and topped with green chilies and coriander. Crispy on the outside, fluffy on the inside. Absolutely delicious! And this is “Kachori,” a deep-fried bread stuffed with beans and spices. The outside is crispy and refreshing, and the inside is filled with the aroma of crumbly spices. In Varanasi, “Kachori Sabji” served with potato curry is a staple. Needless to say, it’s exceptional! Next up , this is “Dosa.” While the previous “Uttapam” is thick, dosa is thin. It’s an Indian-style crepe. It ‘s typically topped with tomatoes and spices, but today we’re trying the simple “Butter Dosa,” made with just plenty of butter. It’s a butter-rich, fluffy, and lightly sour crepe. The butter slowly melts on top of the dough. It looks delicious! Don’t forget to top it off with a mellow coconut chutney and mustard seeds. Thank you, brother! Looks delicious! Time passes peacefully again today in the alleys of Varanasi. A boy buys “peda,” a sweet made with mixed spices and milk, from a shop . Are you running an errand? Hello. Over here is a father selling flower decorations for puja (prayer). Hello. After the meal, of course , we have “meeta paan. ” Also known as “betel,” it’s a delicious palate cleanser. First, catechu paste, extracted from acacia trees , and slaked lime are placed on top of a betel leaf . Then, a thick catechu is added. Next, chopped supari (betel nut). Then, green and red fennel seeds. Finally, sweet coconut. And then, a sugar confectionery mix. Lacha supari (thinly sliced ​​dried betel nut) laced with cardamom. Diced papaya. Then there are colored sugar pearls , clove powder and nutmeg powder. Finally, gulkand, rose petals soaked in sugar, is added. Wrap it up and it’s done. It’s amazing how such a mixture of ingredients harmonizes into a sweet and refreshing taste. It’s just like the city of Varanasi.
