Hello everyone We’ve arrived in Yamaguchi Prefecture Compared with Kyoto Yamaguchi is less crowded and feels more down to earth It’s even nicknamed the Kyoto of the West Today we’re visiting the historic town of Hagi right next to Yamaguchi City Hagi is also a stage for the Sites of Japans Meiji Industrial Revolution Come along with me to Yamaguchi and Hagi Hagi still preserves the rich feel of a samurai castle town Alright let’s go to Hagi I love hot springs so I booked a seaside inn on the Sea of Japan This is the northern part of Yamaguchi facing the Sea of Japan The red mark is our destination Hagi On the way to Hagi we stopped by Yamaguchi City Francis Xavier brought Christianity to Japan in the 16th century This is a church built to commemorate him That is the Xavier family crest A folding screen shows Xavier preaching in Japan This is a reliquary enshrining Xaviers holy arm Portraits his birthplace scenes of baptism and chapels are displayed This is Yanagiya Ichinosaka in Yamaguchi famous for Kawara Soba Its roots are said to trace back to the 1877 Satsuma Rebellion Soldiers grilled wild greens and meat on heated roof tiles during the war Inspired by that a chef in Shimonoseki created the dish in the late 1950s You grill green tea soba on a tile top it and eat in a unique style Now it’s a beloved Yamaguchi specialty popular with travelers Here comes the long awaited Kawara Soba with a beef rice set (Staff) First dip the hot noodles in the broth and enjoy (Staff) Next mix in lemon and grated chili daikon (Staff) The sourness and spice are added (Staff) And it becomes delicious in a different way (Staff) The noodles are fluffy on top (Staff) And crispy on the bottom (Staff) Keep moving them as you eat Wow the soba is still sizzling on the tile The toasty aroma and rising steam are irresistible Shredded egg beef lemon and chili daikon add bright colors It looks gorgeous and you just know it will taste amazing The sweet savory beef soaks into the rice and I can’t stop The classic way is to dip the soba into a slightly sweet broth Crispy noodles coated in rich dashi make a perfect balance Rurikoji Temple in Yamaguchi is a historic Soto Zen temple Its five story pagoda built in the Muromachi era is a National Treasure Though many temples were lost in the Onin War this tower survived It is praised as one of Japans three most beautiful pagodas At night the lights create a magical atmosphere It symbolizes Ouchi culture and is Yamaguchis pride You can feel the weight of history just by walking here Our booked inn is Yoimachi no Yado Hagi Ichirin It boasts sweeping ocean views of the Sea of Japan The hot spring is loved for smooth skin and the open air view is superb Close to Hagi Castle Town you get both sightseeing and seaside relaxation Hagi Ichirin treats guests to several delightful perks First a paid tasting corner for local Yamaguchi sake Next free ice pops for a limited time Nothing beats ice cream after a hot bath There is even a complimentary draft beer service Of course there is a coffee machine help yourself hot or iced All you can drink summer orange chu hai and juices for kids too We’re staying in Ominaeshi a Japanese Western room renewed in 2024 An ocean view room that feels wonderfully open Outside the window is our private open air hot spring So I can soak while gazing at the sea any time I like Step onto the terrace and the Sea of Japan spreads out before you A luxurious moment with the sound of waves The scent of the cypress tub gently calms the mind The sea breeze and rising steam together feel like bliss Now it’s time to reveal the room rate With two meals the total was about 73600 yen The garden has a foot bath area You can unwind while looking out at the Sea of Japan Sipping a free chu hai and relaxing in the foot bath A mom freed from housework takes a quiet break by the sea Through the camera I want to share a moment of pure bliss Dinner time is coming Let’s go eat I’ll report on tonight’s kaiseki course Fujiwara Menu Fujiwara Executive Chef Yuji Saeki Hagi Ichirin Appetizers A seasonal assortment Crisp textures and a refreshing tang spread in the mouth The thick shiitake rivals the wagyu tender and juicy Steamed dish Seafood seiro A generous basket of ocean flavors and vegetables steamed to perfection Dip the fluffy potato into ponzu Light and refreshing yet it brings out the sweetness Crisp young corn with ponzu for a clean finish The sweetness blooms the more you chew The plump steamed sea bream flakes apart gently Refined sweetness and delicate aroma spread as you chew I love how easily the turban shell comes out of the shell A springy bite when you chew And a whiff of ocean brine spreads softly Even the pleasant bitterness of the tail could become addictive Right now everything tastes wonderful This shrimp must be from the Sea of Japan Firm and bouncy with a strong sweetness That rich shrimp umami expands with each bite Sashimi Assorted platter Tuna sea bream yellowtail squid and vinegared mackerel The mackerel leaves a fragrant vinegary finish The tuna is rich and silky the bream sweet and pleasantly firm Yellowtail brings deep savory fat three distinct delights The squid is springy sweet a nice contrast in the mix Vinegared dish Seared sea bream with jelly The jellys acidity layers neatly over the seared bream Fried dish Deep fried fugu The batter is crisp and light with no greasiness A squeeze of lemon tightens the whole flavor with a bright tang With a pinch of salt the fugu sweetness stands out Toasty coating and salt make it irresistibly moreish The contrast of crisp outside and juicy inside is delightful Lemon aroma and saltiness pair perfectly with drinks Its so delicate I could eat it endlessly Grilled dish Live abalone on a ceramic plate Abalone sizzles fragrantly with butter Heated in the shell the aroma rises Squeeze some lemon A fresh acidity lifts the appetite even more Maybe I grilled it a bit long now it’s hard to loosen from the plate Great color on the abalone looks delicious Getting it off the shell takes more effort too A lively chew and concentrated umami spread That crunchy texture with lemon and butter is the best combo Lidded dish Domyoji steamed dish A glossy surface with tiny bubbles a warm homely presence Made with Domyoji rice flour so you feel little grains of mochi rice Silky chawanmushi with dashi umami spreading through Half buffet corner Fugu mixed rice and clear soup take as much as you like Clear soup The clear broth spreads gently and cleanly Fugu rice with freshly boiled whitebait It feels luxurious to pile on as much shirasu as you want The plump fugu rice concentrates pure umami Toasty fugu rice and the salinity of shirasu layer together A bowl that grows deeper in flavor with every bite Fugu dashi chazuke The rice absorbs broth rich with fugu umami A gentle ocean aroma spreads Dessert Seasonal sweets Bavarian cream hides under the jelly no cutting corners to the end Melon brings juicy sweetness And the richness of grapes is gently tied together by the jelly After a lovely dinner I take in the evening view Back to the room and into the open air bath again Savoring supreme relaxation in the quiet I’ll light some incense and get ready for bed Slept deeply and woke up refreshed I entered right when the big bath opened and no one was there So I filmed the bathing area with permission Two charming round tubs in a spotless well kept space There is also a sauna Kids chairs and toys mean families can relax too UV sanitized brushes and POLA amenities for a安心の getting ready Now I’ll try a private open air bath Perfect for families or couples to take it slow The indoor bath is calm and soothing The washing area is spacious and well stocked gohan After mixing it well, pour it over the steaming hot rice Soup course: Hagi’s barley miso Thin-sliced squid sashimi—just a drop of soy sauce The umami instantly comes alive The delicate translucent slices look beautiful Each bite releases the aroma of the sea—this is Hagi’s true flavor Breakfast in Japan often means natto First peel off the film and start mixing The more you stir, the more the threads stretch and the aroma spreads Now add the sauce packet and mix it in thoroughly The stickiness and savory sauce blend perfectly You can enjoy it on rice or on its own The beans are both fluffy and sticky—the balance is just right Even people who dislike natto might find this easy to eat Having a fermented food like this for breakfast feels so good for the body Here’s Hagi Ichirin’s original Mitan beef curry Mitan beef is a rare wagyu you can only taste in Hagi One bite and the juicy beef flavor spreads in your mouth The gentle spices highlight the natural sweetness of the wagyu With rice, it’s a combination you just can’t stop eating The hot pot has finished cooking at just the right moment Next comes the steamer dish: fugu and vegetables Open the wooden lid and the steam and aroma fill the air Inside are lotus root, pumpkin, broccoli, and tender fugu Dip them into the special sauce and start with the vegetables Crisp lotus root with a hint of sweetness—so refined The broccoli is full of dashi flavor, satisfying in one bite And finally, a bite of the star ingredient—fugu The pumpkin finishes it off, sweet and comforting Next is the lidded course—chawanmushi Open the lid and a wave of steam and savory aroma rises The warm bowl feels soothing in your hands Scoop with a spoon—the texture is silky smooth The gentle dashi spreads softly in your mouth With ingredients inside, every bite has depth and richness Finally, tea is served Holding the cup with both hands, the warmth seeps in A sip brings calm and lets you savor the lingering flavors of the meal After breakfast it’s time to say goodbye to Hagi Ichirin World Heritage Hagi Castle Ruins Sites of Japans Meiji Industrial Revolution As the heart of the Choshu domain this was a key historical stage Many who drove the Meiji Restoration took off from here Inside the castle stands Shitakiyama Shrine with the Mori family crest A shrine to the Mori clan where the spirits of late Edo patriots live on Lords and samurai enjoyed tea here and sometimes discussed politics Former Asa Mori Residence Nagaya The Asa Mori were a branch of the main Mori family They served as senior retainers of the Choshu domain in the Edo period Part of their estate the longhouse gate still remains today You can sense how the samurai who supported domain rule lived World Heritage Hagi Castle Town Sites of Japans Meiji Industrial Revolution Many heroes of the Meiji Restoration were born from this town A woodblock style postcard captures the scenery of Hagi Castle Town This is the distinguished Oonarimon the Grand Gate A special entrance used only by lords and high ranking people A floor plan of the Mori long residence once in Gofukumachi These are remains tied to the Mori family In the Edo period retainers homes and buildings stood here These remains are precious records that vividly tell castle town life A Choshu sword guard from the Edo period and a precious blade from about 750 years ago Instruments used by samurai for rituals and battlefield signals Tools of war spanning from the Sengoku era to the Edo period In the center of the garden is the Kago Oki Ishi, the litter resting stone Envoys who passed through the Grand Gate set down their palanquins here Then entered indoors from the veranda according to tradition Next to it is the Enban Ooi, the veranda board cover Because townspeople couldn’t use cypress, they covered it with halved cedar logs A remnant that reflects old etiquette and the class system Gazing at the mossy garden brings Edo daily life adjustable hook for hanging pots over the hearth A stone bridge and seasonal trees in harmony in the Japanese garden Namako walls, fire resistant plaster with black tiles A favorite street food spot in Hagi’s castle town Hagi Purin tei, Yamaguchi’s first specialty pudding shop Their popular puddings Strawberry Milk and Hagi Summer Orange Ensei ji Temple, closely tied to the Choshu domain Patriots of the late Edo period studied here as children Takasugi Shinsaku and Ito Hirobumi also passed through this gate Steles and statues trace their footsteps on the grounds This is the wooden horse said to be Takasugi’s childhood toy Walking here with that in mind makes history feel close A place where you can sense the spirit of the Restoration unique to Hagi Up ahead a striking tengu mask appears This is Hagi’s Konpira Shrine, the air is steeped in history Sanpo offering stands tied to the Mori clan and a solemn mikoshi are preserved We met an elder in a Hagi Buddhist Association happi coat He passionately tells visitors all about Hagi lol (Man) Just in front of this temple Sixty percent of households have University of Tokyo grads In this neighborhood alone two NHK Taiga drama leads And this block you see In 1967 Showa 42 From a nationally protected castle town to in 2016 Heisei 28 When it became a World Heritage Site Even mighty NHK had to relocate On the map I gave you NHK is harvest them Normally with oranges you know You harvest all by April In May the flowers bloom But this is a national historic site and World Heritage These oranges are for welcoming tourists So plant school where Yoshida Shoin taught young people The building itself is barely eight tatami in size Yet from here came people who would reshape Japan Takasugi Shinsaku Ito Hirobumi and Yamagata Aritomo among them They later became central figures of the Meiji Restoration And led Japan toward a modern state Shoka Sonjuku nurtured not only scholarship But the will to carve out the nation’s future That spirit is why it was honored as part of the Sites of the Meiji Industrial Revolution Inscribed on the World Heritage List in 2015 Students sometimes gathered on the tatami to debate And sometimes received Shoin’s passionate guidance Ideas and learning shared here later bore fruit Becoming the driving force for modern Japan This is the Hagi Reverberatory Furnace, a World Heritage Site In the late Edo period Japan feared Western military power A reverberatory furnace is an advanced smelter for casting cannon Hagi engineers adopted Western methods and built one by hand Their goal here was to produce domestically made iron cannon A desperate challenge to stand against Western powers They never reached full scale cannon production But their efforts became a major step toward modernization This test furnace survives and tells of Japan’s industrial dawn A landmark of the beginning of the Industrial Revolution in Japan We’re wrapping up at Roadside Station Hagi Seamart Seafood bowls tempura and flavors unique to Hagi line the stalls A lively market where locals and travelers gather Seasonal fish and fruit abound, just strolling is fun Looking back Hagi was a treasure house of hot springs history and food World Heritage sites let us feel the pulse of the late Edo era Today I chose a super fresh sashimi set meal Each translucent slice was a surprise The
