Midnight Cat Diner Tonight, let’s make cold ramen. The soup uses soy sauce and chicken stock powder. I prepared it in a pot yesterday and chilled it. Using katsuo-kombu dashi for a light Japanese base. It’s still hot, but I can slowly feel autumn in the air. This ramen is perfect for a body tired from the heat. Just right. Dissolve the chicken stock powder in hot water. Then add soy sauce. I kept the salt light since it will be mixed with the dashi. If it’s too light, I’ll adjust later. This is thinly sliced pork for shabu-shabu. It cooks in about 30–60 seconds. We’ll put it on the ramen later. Next, boil the noodles. While the water is boiling, peel the boiled egg… I boiled it for 7 and a half minutes. It turned out great! I like them a bit firm, so I cooked them 30 seconds less (2 minutes total). Cool the noodles in plenty of ice water. Cooling makes them firm and chewy. Drain well. Here’s the sauce we made earlier. Add the cold katsuo-kombu dashi. Once you add the noodles, it’s almost done. ・Chinese noodles – 1 serving
・Pork (for shabu-shabu) – 50g
・Boiled egg – 1
・Chopped green onion – as desired
・Menma – as desired
・Soy sauce – 2 tsp
・Chicken stock powder – 1 tsp

前日に鍋で鰹こんぶ出汁を取り、冷蔵庫でしっかり冷やしました。
暑さで疲れた体に、優しく染み渡ります。
