Let’s make cucumber seaweed soup, the best side dish for hot summer days. Cucumber Cold Soup Prepare 15g of dried seaweed. Soak the seaweed in cold water for 10 minutes. Be careful not to over-soak or boil it too long, or the texture will get mushy. Prepare two cucumbers. Cut off both ends of the cucumbers as they can be bitter. You can slice them with a knife, but using a slicer is easier and quicker. Thin slices absorb seasoning better and taste better too. Be careful not to cut yourself when slicing the ends—just eat that part! Slice two green chili peppers and one red chili pepper. My knife is too dull… I really need to sharpen it. Drain the soaked seaweed and blanch it in boiling water for 10 seconds. Don’t over-soak or overcook—it will become mushy. Rinse the seaweed well in cold water. No need to squeeze it too hard. Now cut the blanched seaweed into bite-sized pieces. Mix the sliced cucumber and seaweed together. Add the chopped green chili peppers. To 1.2L of water, add 6 tablespoons of double-strength vinegar, 8 tablespoons of sugar, Adjust to your taste. 2 tablespoons of salt, Mix well until the sugar and salt are dissolved. Add 1 tablespoon of tuna sauce. Now pour the broth over the cucumber and seaweed. Add 1 tablespoon of minced garlic. Mix everything well. If you like a bit of a kick, add 1 tablespoon of red chili powder. Whole sesame seeds are fine, but ground sesame tastes even better. Taste it now and adjust the seasoning if needed.
