軽井沢で最高の贅沢【ふふ旧軽井沢】ラグジュアリープレミアムスイートに宿泊

We traveled to Japan in mid-November and stayed one night at “Fufu Karuizawa – Seiyo no Mori (Forest of Rest)”. We will introduce the rooms and cuisine we stayed in. From Awara Onsen, where we stayed the night before, we headed to Karuizawa on the Hokuriku Shinkansen. We decided to use Gran Class. The seats are spacious and very comfortable. We’ll sit in the back seat because we can put our suitcases behind us. “Hokuriku BEER” Amber Ale purchased at Awara Onsen Station At Nagano Station, we changed from Hakutaka to Asama.
It was a very smooth transfer as we just moved across the train on the same platform. Arrive in Karuizawa in about 2.5 hours from Awara Onsen Station. When we left the ticket gate, there was a decorated Christmas tree. This is the north exit. There is the old Karuizawa Station building. It is still in use as a Shinano Railway station building. Overlooking the autumn-colored mountains Since we had some time before check-in, we decided to visit Kumoba Pond, which is a 3-minute walk from Fufu Seiyo no Mori. It is scheduled to open in the summer of 2024. The Shojiba River flows just before the entrance. The autumn leaves seen from the bridge are also beautiful. There is a promenade that goes around Kumoba Pond, with Route A being about 550m long and Route B being about 1km long. This is one of Karuizawa’s most famous autumn foliage viewing spots, where you can enjoy the atmospheric scenery of colored trees reflected on the water’s surface. There are many bicycles parked next to the entrance. Do many people go around sightseeing spots by bicycle? This is the beautiful pond that you can see first from the entrance. Continue walking along the promenade with the pond on your left. The road is wide enough for two people to walk side by side and is not paved. The vivid red leaves of trees are truly beautiful. Looking up at the autumn leaves drenched in sunlight, they shimmer as they are reflected off the water. Going around the pond halfway, you will come to a small bridge. The inn we will be staying at is “Fufu Kyu Karuizawa – Seiyo no Mori”. When we arrived by taxi, the staff were already waiting for us. Fufu Karuizawa Seiyo no Mori opened in December 2023. A luxury resort for adults, quietly nestled in the forests of Kyu-Karuizawa. Once you pass through the entrance, you will see a small front desk on your right. FUFU Karuizawa Seiyo no Mori has been awarded 1 Michelin Key in 2024. For check-in, we were guided to a seat by the window in the lobby lounge overlooking the courtyard. We had white birch tea as a welcome drink. A herbal tea made from birch leaves The trees in the courtyard are turning red and it’s very beautiful. Check-in procedures will be carried out using a tablet device. Confirm the time of your reserved Teppanyaki dinner. Check-out is at 11am. Breakfast is served at 8am, 9am or 9:30am. We had requested an extra Chateaubriand for the teppanyaki dinner, and they confirmed it. There is a bar at the back and a table in front of the bar with several types of wine. Free alcoholic drinks are available from check-in until 7pm. Apparently there is a similar one on the Kumoba Terrace outside. You can see the bar counter at the back of the lounge. Many bottles are neatly arranged and backlit, making it a beautiful sight. There are four seats at the counter. The bar has a couple of table seats as well as counter seats. A decorative shelf with unique items beautifully displayed. The decorative shelves are placed at each table and also serve as partitions separating the seats. There is a shop next to the front desk. Fufu original amenities and accessories, as well as Nagano Prefecture exclusive products are also available for purchase. There are also apparel items. It’s a two-story building and our room is room 105, at the back corner on the first floor. The restaurant “Karuizawa Shion” is on the second floor, immediately to the right after you get off the elevator. Once outside, walk through the outer corridor to your room. You can see Kumoba Terrace on your right. Free drinks are available. Beer, white wine, red wine, sparkling wine, Screwdriver as a cocktail They also have non-alcoholic white and red wine, apple juice, ginger lemonade, and snacks. Comfortable outdoor sofas and garden parasols. The autumn leaves are beautiful. There is also a fire pit. This time we are staying in the Luxury Premium Suite, the highest class room. A spacious room with an area of 113 square meters. The spacious, barrier-free entrance is equipped with benches and a full-length mirror. When we enter the entrance hall of the room, we feel a wonderful scent. It is the FUFU original “Spicy Wood” scent. When we step through the entrance, we find a spacious living room and dining room. First, we received two classic room keys, then we will be given an explanation of our room. To the right of the TV is a bio-ethanol fireplace. Apparently it’s for decoration and not for keeping warm. We can ask the butler to light a fire for us once during our stay. Everything in the fridge is free except for items with price tags. Shinshu apple juice, Shinshu soba tea, sparkling wine, beer, carbonated water The door pocket contains pure natural water from the Northern Alps called “Yukiyama Shizuku.” The kettle is a Russell Hobbs. The snacks are funnel sweets. Uniquely designed coffee dripper Coffee is Kilimanjaro Blend and Karuizawa Blend from Karuizawa Roastery. Green tea and buckwheat tea are also available. Shinshu whiskey and other drinks are also available for a fee. The door below contains glasses and mugs. Sommelier knives are also available. In the other door are whiskey glasses, wine glasses, and champagne glasses. Room service menu: Not only light meals but also steak meals are available. A unique object is lit up next to the minibar. Let’s take a look at the bathroom There is a wash area with a hand shower and a rain shower. Fufu original SUEDO BROWN body wash, conditioner, and shampoo The bath water is brought from Oshio Onsen in Nagano Prefecture. It is slightly alkaline with a pH of 7.5. The water temperature is set at 41.5°C but can be adjusted. Half of the bathtub is shallow so you can enjoy a bath while lying down. The security box on the bottom The TV is covered with a shutter door made of the same material as the surrounding area so as not to spoil the overall interior design. With the latest smart TV, you can watch YouTube, Netflix, etc. while lying in bed. It seems to be the same size and function as the TV in the living room. In the closet to the left of the TV, there are two winter coats for use inside the building. Plenty of hangers, clothes brushes, and bathrobes are provided at the bottom. This one is a little larger and has a hand washing counter. We’ll go to the lounge before dinner. The firewood is lit in the fire pit. The trees are lit up, creating a lovely atmosphere. Australian Edenvale We decided to have Matsumotodaira Black Queen. We sat down in front of the fire pit and enjoyed some drinks. The full moon can be seen between the illuminated trees The fireplace has a nostalgic feel and is heartwarming. Dinner will be served at the Japanese restaurant “Karuizawa Kamioto” We were guided to a teppanyaki counter seat. For dinner, you can choose between a traditional Shinshu Japanese meal or a lively Teppanyaki meal. This time, we will be having Teppanyaki. The Teppanyaki menu is a course meal consisting of appetizer, soup, sashimi, seafood, palate cleanser, meat dish, main course, and dessert. For meat dishes, you can choose between sirloin or filet, and you can add more or have extra portions for an additional fee. We decided to choose one sirloin and one filet to share. We also had the Chateaubriand that we had reserved in advance. Meals can be chosen from garlic rice, black beef tendon stewed in Shinshu miso, or plain rice. The basic fish dish is scallop mousse wrapped in sole and topped with sea urchin cream sauce. You can also add or replace live abalone or spiny lobster from a tank for an additional fee. There are three types of pairings: “Shinshu local sake tasting set” 3 glasses of wine pairing There are 4 glasses of premium pairing We have started grilling a galantine of Sanadamaru local chicken from Nagano Prefecture as an appetizer. There are three appetizers. Arrange the grilled chicken galantine on the plate. Canapes made with purple sweet potatoes from Nagano Prefecture, topped with caviar Nagano Prefecture figs and Jamon Serrano ham Galantine made with Sanadamaru chicken from Nagano prefecture and stuffed with ingredients It is served with a sauce made from sweet port wine and mustard. These are meat and vegetables for steaks.
The meat used is Shinshu Apple Wagyu beef. Apparently, they mix misshapen apples from Shinshu and apple juice pomace into the cattle feed. This will increase the amount of amino acids and oleic acid, which are the source of umami, and result in tastier beef. This is the Chateaubriand we were looking forward to. This is the rarest and most premium cut of meat from the center of the fillet. Every part of the fish has beautiful marbling and looks delicious. Start grilling the meat immediately. Once cooked, let it rest for a while. First, we ordered beer to quench our thirst. Karuizawa Ale is a hoppy beer. One of the fish dishes has been changed to spiny lobster. Half of a large live lobster The chef is heating the soup. A rich soup made by stir-frying lobster heads, black tiger shrimp, and vegetables from Shinshu and simmering them slowly. Top with whipped cream and serve as a cappuccino. We use walnuts from Nagano Prefecture as an accent. Lobster bisque soup The mellow yet rich flavor of the bisque fills your mouth and is irresistible for shellfish lovers. The next dish is being prepared at the table behind us. It’s sashimi The sashimi is seasonal winter yellowtail, grilled scallops topped with salmon roe. Lightly smoked marinated Shinshu salmon The sauce is a sour citrus sauce called calamansi vinegar. The green sauce in the foreground is a jelly made from Azumino wasabi. The salt is rock salt and cured silk. We will grill spiny lobster, a seafood dish. They are lively and moving around on the hot iron plate. Turn it over and cook the flesh side. Cover and steam cook This is another seafood dish, sole steamed in white wine. Remove the lobster meat from the shell The head and shell are steamed again. The lobster meat is cut into bite-sized pieces. Place the meat on the steamed shell. Place on a plate The chef is compleating to cook the sole dish. Scallop mousse wrapped in sole steamed in white wine A sauce made by slowly simmering sole bones and vegetables, then thinning it with cream and sea urchin Accented with red pepper puree Finally, top with zucchini, cherry tomatoes and sea urchin to complete. Looks delicious! The lobster is topped off with a rich Sauce Americaine (American sauce) made from lobster stock. The plump texture of the fresh spiny lobster is enhanced by the rich flavor of the sauce, making this a delicious dish. We were late in ordering the pairings, so the two drinks came almost at the same time. The wood ear mushrooms and turnips that accompany meat dishes are fried in butter. Black pepper on the plate A sherbet to cleanse your palate before a meat dish Organic lemon sorbet It was refreshing and a nice palate cleanser. First, arrange the wood ear mushrooms and turnips. Garlic chips are also placed on the plate. As a dipping sauce, from the left: Apple salt Steak sauce based on Nagano’s local ingredient “Shoyu mame (soy sauce beans)” The one on the far right is wasabi from Azumino. A big fire! Cut the meat into bite-sized pieces and arrange the three types on each plate. Shinshu Apple Wagyu beef is flavorful and tender, allowing you to enjoy the texture and flavor of each different cut. Chateaubriand has a special flavor and softness that melts in your mouth. Served with California Cabernet Sauvignon Fry the garlic for the garlic rice. Squeeze out the fried oil The squeezed oil is discarded. Put the rice on top of the egg yolk and stir fry. Garlic rice is cooked with as little oil as possible. The lightly fried garlic rice looks delicious. Add the perilla leaves and mix. Then, brown the dashi soy sauce and mix it in. Topped with Nagano’s specialty pickled Nozawana, it has a crunchy texture and is delicious. It is topped with black garlic fermented in Nagano, a region with a rich fermentation culture. Finally, top with chopped nori and it’s done! The fluffy garlic rice went perfectly with the toppings, making for an exquisite taste. This is another dish, miso stewed beef tendon. Topped with chopped white onions This delicious dish is made with melt-in-your-mouth beef tendon stewed in miso, and the richness of the miso makes it an irresistible treat. Serve with white rice Pickles are mini cucumbers and turnips pickled in miso. Red miso soup The final dessert will be served in the lounge. They even brought us the leftover wine. Dessert: Shinshu grapes, persimmon, and vanilla ice cream The dome-shaped chocolate is filled with raspberry terrine. Return to your room while looking at the beautifully lit up garden. The Teppanyaki dishes prepared by the head chef using local ingredients were exquisite and impressive in taste. I went for a quick jog early in the morning. It seems that it rained a little during the night. I went to the old Mikasa Station site and turned back, then passed by Sawamura Roastery on the way back. Sawamura Roastery is a popular bakery that serves homemade bread and drip coffee. After running, I wash off the sweat in the morning hot springs. The natural fresh air is a great feeling. Relax on the terrace It’s a blissful moment, soothed by the beauty of the autumn leaves. This is a very relaxing and comfortable room in a spacious environment surrounded by nature. Breakfast is served in the same restaurant as dinner. We were shown to a seat overlooking the courtyard from the window. The autumn leaves seen from the window are beautiful. This is the “Apple Pot” Scallops and Maitake mushrooms inside a hollowed out apple Topped with grated apple and ponzu sauce A small bowl of simmered vegetables topped with fried dried squid. The sashimi is pickled tuna It is topped with walnut soy sauce made from walnuts, a specialty of Shinshu. “Cocoon box” The top tier contains hot dishes and the bottom tier contains cold dishes. The top tier contains rolled omelet, grilled hawk with Saikyo miso, croquettes, eggplant with dengaku miso, turnip, and vegetable stems. The bottom tier contains grated salmon roe, grilled shiitake mushrooms, roast beef wrapped in asparagus, pickled Nozawana, and mentaiko. Asparagus wrapped in roast beef and topped with fig sauce Grilled shiitake mushrooms hidden underneath Nagano’s new rice is made from locally grown Koshihikari rice cooked in a clay pot. The pot is boiling. In addition to the pork, it also contains small potatoes, chrysanthemum greens, Chinese cabbage, and green onions. It has a creamy, mellow and comforting taste. Green curry This is Fufu Karuizawa’s favorite dish. Melon dessert We had coffee It was pleasant to have breakfast while looking out at nature in the courtyard, and it was a heartwarming and delicious breakfast made with carefully prepared seasonal ingredients. After breakfast, we relaxed in our room and then went to the lounge to check out. On the way back, we arranged a taxi to take us to Karuizawa Station. The staff members saw us off until we were out of sight. The whole accommodation was stylish and fashionable. Enjoy live teppanyaki cuisine made with ingredients from Nagano Prefecture. We were able to spend a relaxing and luxurious time surrounded by the nature of Kyu-Karuizawa. On the way back, there is no need to change trains from Karuizawa Station to Tokyo. 信州の木々が美しく紅葉した11月に訪れた軽井沢「ふふ旧軽井沢 -静養の森-」に宿泊した時の様子を動画にしました。

ふふ軽井沢「静養の森」は2023年12月に「陽光の風」と共に軽井沢にオープンしたふふのラグジュアリーリゾートです。旧軽井沢の森の中にひっそりと佇むシックで静かな落ち着いた雰囲気で木漏れ日の揺れ動く中庭が素敵なお宿です。2024年度には1ミシュランキーを獲得しています。

今回はふふラグジュアリープレミアムスイートという最上級のお部屋に宿泊しました。
113㎡のとても広々としたお部屋で、炎がゆれる暖炉、天然温泉の大きなお風呂が設えられています。広いテラスは森とつながるように感じられ、驚くほど広いダイニング・リビングルーム、快適なベッドルームの設えで自然に囲まれた環境の中でゆっくりと贅沢にくつろぐことができました。

夕食は日本食と鉄板焼きを選ぶことができますが、私たちは鉄板焼きを選びました。(私たちの予約した時点では鉄板焼きはお宿の公式ホームページからのみ予約できました。)信州りんご和牛をはじめ、信州の食材を多く使った極上の鉄板焼きコースに舌鼓をうちました。

中庭の木々の美しい紅葉で癒され、お洒落でシックな贅沢滞在を愉しむことができました。
