Today, I’m introducing two springtime dishes from Japan: rice cooked with seasonal bamboo shoots and Wakatake-ni, a gentle simmered dish of fresh wakame seaweed and bamboo shoots. Please enjoy the delicate flavors of this beautiful season.

Bamboo Shoot Rice & Simmered Bamboo Shoots with Wakame (Wakatake-ni)
A taste of Japanese spring

🌿 Preparing Bamboo Shoots
Wash the bamboo shoot thoroughly.
Cut off the tip diagonally, and make a shallow cut along the side to peel it more easily.
Place the bamboo shoot in a large pot with plenty of water and two handfuls of rice bran (nuka).
Bring to a boil over high heat, place a drop lid (otoshibuta), then reduce to low and simmer for about 1 hour until tender.
Let it cool in the cooking water.

Rinse off the rice bran.
Cut the bamboo shoot in half and peel off the outer skin.
Trim the tip at a visually balanced point.
Peel the tough outer layers from the base.
Thinly slice the soft inner skins (called “himekawa”) and rinse briefly in water.
Cut the bamboo shoot into bite-size pieces.

To make the dashi broth:
Soak 10g kombu in 1000ml of water for at least 1 hour.
Bring to a boil, remove the kombu, then add bonito flakes.
Simmer for a few minutes and strain.
In 400ml of dashi, combine:
1/4 tsp salt
1 tbsp light soy sauce
2 tbsp sake
2 tbsp mirin
Add the bamboo shoots and simmer until flavors are absorbed.

🍚 Bamboo Shoot Rice (Takenoko Gohan)
Rinse 150g rice and soak for 30 minutes.
Drain in a colander.
In a pot, combine:
the soaked rice
sliced bamboo shoots
finely chopped abura-age (fried tofu)
180ml of the bamboo shoot simmering broth
1 tsp light soy sauce
Bring to a boil. Once boiling, cover and cook on low heat for 8 minutes.
Turn off the heat and steam with the lid on for 10 minutes.

🍵 Wakatake-ni (Simmered Bamboo Shoots and Wakame)
Cut fresh wakame seaweed into bite-sized pieces.
Blanch briefly in boiling water, then cool in ice water.
Mix the remaining bamboo shoot broth with kombu-bonito dashi to make 300ml total.
Add the simmered bamboo shoots and wakame.
Season with:
about 2 tsp light soy sauce
about 2 tsp mirin
Simmer briefly and serve.

・Cooked bamboo shoots (from above)
・1 aburaage (fried tofu), chopped
・180ml broth from simmered bamboo shoots
・1 tsp light soy sauce

🍵 Wakame and Bamboo Shoot Simmered Dish (Wakatake-ni)
・Cooked bamboo shoots (from above)
・Fresh wakame seaweed (new season, if available)
・300ml broth (leftover bamboo shoot broth + bonito dashi)
・About 2 tsp light soy sauce
・About 2 tsp mirin
