高明瀨粉是廣東佛山高明區的傳統特色美食，起源於晚清時期，以稻米為主要原料，經磨漿、蒸煮、擠壓等工序製成粗條狀米粉，口感爽滑彈牙，帶有獨特米香。傳統做法講究手工製作，需將米漿蒸熟後透過「瀨孔」擠出成型，故得名「瀨粉」。常搭配老火熬製的豬骨湯或雞湯，佐以蔥花、花生、叉燒、蛋絲等配料，節慶時更會加入蓮藕、冬菇等食材。高明瀨粉被視為當地飲食文化象徵，尤其中秋節有「吃瀨粉祈求長壽」的習俗，2018年入選佛山市非物質文化遺產名錄，推薦店家包括「江南濑粉店」「公記濑粉」等老字號。

Gaoming District, located in Foshan City, Guangdong Province, China, lies in the western part of the Pearl River Delta, bordering Jiangmen and Zhaoqing along the Xijiang River. Established as a county in the Ming Dynasty (1475 AD), it became a district under Foshan in 2002. Covering 960 square kilometers, it has a population of approximately 470,000 (2023). The economy is driven by manufacturing, including textiles, food processing, building materials, and chemicals, with emerging industries like new energy and eco-technology. Its 2023 GDP reached around RMB 110 billion. Known for ecological excellence, the district boasts a 58% forest coverage rate, featuring attractions such as Yunyong Forest Park and Luhu Holiday Resort, and holds the title of “National Ecological Civilization Demonstration Zone.” Cultural heritage includes dragon boat racing and Wing Chun martial arts, while local delicacies like Gaoming rice noodles and Sanzhou black goose are renowned. Transportation networks include the Guangming and Jiangzhao highways, Gaoming Port on the Xijiang River, and the planned Pearl River Delta Hub Airport, enhancing its regional connectivity.

Gaoming Lai Fun, a traditional specialty of Gaoming District in Foshan, Guangdong, originated in the late Qing Dynasty. Made primarily from rice through grinding, steaming, and extruding, these thick rice noodles boast a chewy texture and distinct grain aroma. The name “Lai Fun” derives from the process of pressing steamed rice paste through perforated plates (“lai holes”). Typically served with slow-cooked pork bone or chicken broth, it is garnished with scallions, peanuts, barbecued pork, and shredded eggs, while festive versions include lotus root and mushrooms. Symbolizing local culinary heritage, it is traditionally eaten during the Mid-Autumn Festival to symbolize longevity. Recognized as a Foshan Intangible Cultural Heritage in 2018, renowned eateries include “Jiangnan Lai Fun Shop” and “Gong Ji Lai Fun.”
