I’m here, so let’s go straight ahead. There’s a barrel. It’s a place where there’s a lot of excitement. If you’re talking about whisky, it’s a barrel. First, the malt is ground, and then water is added to it to saccharify it into sweet sugar.After that, yeast is added and combined. After that, we add distillation heat and accumulate steam.This means that the alcohol becomes stronger , so we make barrels and age it there for many years. , it takes decades to make whiskey . This is a fuel called peat. By burning this, the whiskey can have a smoky flavor. Before the tour begins, we will first show you a slide show. First of all, we will receive an explanation about the time of the company’s founding.It seems that Yoichi Town, which is cool all year round and has sea breezes , was perfect for making whisky.What is whiskey in the first place? It is saccharified, fermented and distilled and then aged in wooden barrels.The Yoichi Distillery seems to be producing this barley malt whisky , so let’s talk about the production process next . The process of germinating the barley is called malting , and it plays a very important role in the subsequent process.The next step is to dry the malt.By cooking this peat, it is dried while imparting aroma . At this point , whether you use peat or another fuel will greatly affect the taste of the whiskey later on.I was asked to try smelling the flavored malt.It was very smoky. There were some customers who thought they were drinking whiskey just by listening to this cat.The next step is saccharification.By adding water and barley to the mash tun, the saccharification soda transforms into wort, sweet sugar, and nectar. At this point, it seems that the barley must be germinated before it can be made into this wort state.The next step is the fermentation process.By adding yeast, the wort is made to thicken over four days . This is a liquid that contains alcohol.After this, the process is called distillation.By heating the vapor, the vapor is turned back into a liquid.By doing this, the alcohol content increases.Yes , this Afterwards, the tour began and we immediately arrived at this drying tower.This is a facility where malt is dried by smoking it with peat.Although it is not in use now, it is designated as an important national cultural property in Yoichi. We put the alcohol-containing mash into a device called a pot still , and by taking advantage of the fact that the boiling point of alcohol is 78.37 degrees and the boiling point of water is 100 degrees, we raise the alcohol content by constantly maintaining the temperature between that range. At the Yoichi Distillery, we are particular about direct coal-fired distillation , which apparently makes the whiskey mellower.On this day, we were able to see how the coal is added, so we would like to share it with the viewers. Also, the small pot still here was the one that was used when the company opened, and it is no longer in use and is displayed as a symbol.The distilled whiskey can be found here . The whiskey is filled into barrels in the mixing building.This is a building called Rita House.It is not that Masataka Taketsuru’s wife, Rita, lived there, but that it was used as a whiskey laboratory.Nowadays The old Taketsuru residence has become warped in places, making it impossible for people to enter.This is the former Taketsuru residence in the suburbs of Yoichi Town, where Mr. Taketsuru lived.
