Sake Brewery Tour : RIHAKU Sake Brewing Company – How to Make Sake
We visited “RIHAKU Sake Brewery” in Matsue City, Shimane Prefecture. Thanks to the kindness of Rihaku Sake Brewery, the president gave us a tour of the brewery. This is where the rice is steamed. What impressed me about the president’s explanation was about “visualization” and “reproducibility.”
By quantifying sake brewing factors such as water content and weight, Everyone is kept informed of the situation. Even if a sudden illness leaves, anyone can take over the work. And they seem to only do reproducible things.
In the video, the rice is being transported by a crane, which is designed to weigh the rice. The next step is to make koji from the steamed rice. Temperature control is also in place here. This is a prepared tank. There was a pleasant scent in the room.
This is a giant machine used to squeeze sake. This is a tank where finished sake is stored. I can’t drink it all by myself. This Omachi rice is valuable. Next, we will visit the sales and tasting corner. In addition to sake, related goods are also sold.
“Sake lees paste” can be conveniently used in small quantities regardless of the season. “Sake lees chocolate” Everyone except the driver sampled it. We want to thank Rihaku Sake Brewery for their help this time. Thank you very much!
