马来西亚酒楼,与广州和香港的酒楼文化是一脉相传的,最初源自广州成为清朝唯一通商口岸的历史,随着对外贸易的繁荣,广州的宴席文化蓬勃发展,传承至香港,继而飘香至马来亚。阿賢遠赴香港采访硕果仅存的地爐燒豬作坊,看看师傅如何用暗火烤制芝麻皮烧猪,再用明火炮制玻璃光皮乳猪。接着阿贤再寻访香港粤菜一代宗师“七哥”创办的家全七福,品嘗大紅片皮乳豬,以及別具匠心的豬肚鳳吞燕等多道經典酒樓功夫菜。
The Malaysian Chinese restaurant inherits culinary traditions from Guangzhou and Hong Kong. Axian journeyed to Hong Kong, interviewing the last traditional charcoal-roasted pig workshops. He explored how masters use indirect heat for sesame skin on pigs and open flame for glossy skin on suckling pigs. Axian then visited the Seventh Son Restaurant, founded by Cantonese cuisine master Mr. Chui, savoring signature dishes like Barbecued Whole Suckling Pig and creatively crafted offerings like Double-boiled Pork Stomach stuffed with Whole Chicken filled with Bird’s Nest.
