Cook if they are for example if the monks are leave in the jungle the jungle temples yeah and people could not go and offer the frood to them so they can cook but without killing any animal so completely vegetarian can be or people
Offer the the meat to them yeah okay and they they will eat this only when only it’s when it’s offered to them y but uh if they’re not living in the they got the kids in the background when they if they’re not living in a jungle temple
Would they usually uh cook for themselves or do they have uh they have a routine every morning that they have to walk out from the temple mhm around the community to receive the food from the people the waiting for offering
Every morning that is a monk’s routine wow so the people in the communities they are feeling like it’s a religious thing where they are blessing being blessed by the monk so they give the food and the monk takes this eats this
And this is how he is like living very kind of simple yes a very simple life and the idea is make the people still offer the food to the mon every morning because they believe that kind of food going to the ancestor that pass away oh
Wow it’s very interesting I never knew that yeah it’s not only for the monks to eat they believe the food that monk eat had eaten well go back to the ancestors who’ve passed away yeah wow so very like uh superstitious Very Superstitious so
Peace was just saying that this is like the underwater world yeah but also they’ve got the sky and the elephants of flying you’ve got the Buddha Lotus because in uh Buddhism and also in Hinduism the Lotus is very it’s like a

Milk over there that’s awesome I love that I like seeing kind of how the raw ingredients the Coconuts in the corner turns into the milk because they use all Hello beautiful dog uh and like they have like uh there use a lot of coconut
Milk in Thai food all right so for Thai food thai food from the south region and the middle region mainly Co C coconut is the main ingredient mhm but in the north here you don’t see coconut there’s no coconut milk in the food yeah the
Original way no coconut milk for shangai for Lana for Lana but you but when we’ve been eating in changai we see in like the cow soy they have the coconut milk in there it’s just not not authentic no okay it’s not authentic guys co uh cow
Soy cow soy is a food that get INF from many count Chinese mhm Chinese with noodles and the noodles let’s move away they’re greting the uh the coconut happens in Asia so uh yeah actually the just random noises puts you
Off but so the noodles come from China the curry come from Bama India oh from India okay India yeah okay and the cow soy originally with chicken and beef no pork okay it’s Muslim cow soy was Muslim it was used to be a Muslim food
Originally from uh which country it’s kind of Persian Persian wow so so many different cultures into one dish yeah and then coconut meal from the people who from like Bangkok or around there from my south of uh Thailand and move here and now M and Mer each
Other as a cowy such an international dish we had no idea cow soy is one of my favorite dishes so far I love it absolutely love it Cy become more fre much since Bangkok or people from Senter visit changai okay but it’s not
Authentic food from changai no no but today is all about trying authentic food from this region all right right so go there we’re going this this way you can see they’re selling all kind of little snacks here kind of chips this looks

This is all authentic curries from changai yeah and uh we haven’t seen any tourists around here yet but sometimes they come for the cooking classes so you can see they’ve got beautiful curries here I’m trying not to get hit by this
Uh kind of wind fan I I don’t know what to call this uh thing here most of them they call gang gang so how much is it for uh bag 30 30 including rice including rice okay sticky rice sticky rice so we’ve got sticky rice jackf

Thought this would be too much mhm but you have this sweet um pork flavor of the sausage crispy outside and then you have uh the chili you just bite into it and it gives it a very subtle like uh spice to it yeah it compliments very
Well like like the flavor in the chili isn’t just like chili it tastes a bit uh like oh some ginger some ginger do you eat the ginger afterwards again yeah same eat this first eat this first okay all right I’ll try the stick

Then they steam it they steam it yeah steam it and then they put in stick for reheat it before the S oh that’s why the eggs were on the stick y mhm okay that’s interesting so it’s a way to when you’re going on Long Long Journeys to preserve
The egg so that you have a good quality egg and it’s not going to spoil or smash crack you have to crack the egg yeah it’s exactly the same I love how you’re using the bike as a uh as a plate or as a a place to store all the food or

Have the genan that makes me when I taste coriander it tastes like toothpaste it tastes worse it was worse than toothpaste to me but uh I don’t mind it in Foods too much beautiful so we got some chili coriander it looks
Like uh the Jack fruits mixed in with some kind of maybe onion I don’t know sticky rice sticky rice sticky rice the fresh sticky rice logo people do eat like this some of the local people they have no no opportunity
To get meat so they can eat like this and this for the whole day uh why is there no opportunity to eat meat they’re poor oh cu the it’s expensive the meat yeah so the jack fruit is like the the cheapest of any vegetables you can you
Can get them from your backyard people grow them in the backyard so the ja fruits yes and so this is cheaper for them to eat than Meats yeah okay and also the high protein and fiber as well in the jack fruit yep so people do the
Sticky right and then do like this m and after that you’re making like a little spoon there you go and scoop it oh just like that perfect okay let’s give this a go so we just have to make a little

Inside of here and then you got a bit of a kick from the would you actually eat the chili like this yes afterwards all together all together okay so in the spoon you can actually do an ADD bit of the chili to it so delicious
It’s so many spices which are not even visible I I can’t even taste that it’s not meat it t it tastes exactly like meat like the texture of the jack fruit you’re going all together or you’re going B bite but is this one spicier
Than the other one much much spicier okay let’s try this there’s a little bite k a little bite a spoon and a chili little bite and then eat this a little bit more a little bit more a little bit more you actually took like a little
Tiny piece can you taste the flavor in the chili compared to the green chili this one is not fresh this one is dry and it’s coming like the taste is kind of coming it’s more like chili flakes but it’s very nice but is it very spicy actually I don’t know like for me
It’s not spicy now but it’s coming right it’s like an after effect so peace has got us a surprise hidden item that we have no idea what it is so uh ladies first you want to go for it there’s two types so there’s more like a purpley one
I’m going to go for the other one this looks sweet I’m going to I’m just it’s made from uh sweet potato and casawa flour mhm so sweet potato and Cawa flour same same but they have yellow and purple I love that it’s got sweet potato wall yeah I
Love the color your a taro yeah mhm chewy Sweet the kind of sweet potato flavor comes through and crispy from the outside M try your purle one let try the purple one yeah H sweet potatoes I love also that peace is eating with us cuz sometimes on

Between 3: and 8:00 p.m. and it’s for cup cup and it’s open at that time specifically to cater to the locals who are coming to get their local produce everything was Super Fresh and as a tourist I would never think to come here
Because to be honest I never knew of the place until we came there and it’s compared to the markets we’ve seen around the world especially in Asia it’s super clean and there’s lots of delicious foods that are well kind of
Presented and that’s very important very clean so we’re not going to get sick and be on the toilet we’re joining the main road right now so what I like here on this tour is you go through very isolated very rural areas of chai Ma you
Can see people have got their washing up here got to be careful one-handed because yeah this is a little bit sketchy that’s all right ah we’ve come out to I think the area oh that’s a sun cup all right
So we come out to the river it’s like a canal canal canal we can ride along here it’s okay perfect you good yep so you can see along this canal there are people selling some some kind of foods that look like uh some kind of sweet potato got the lanterns here you get
Some sing souvenirs so we’re just strolling along the canal piece has just said that the water in here isn’t the cleanest it’s the waste water from the town yeah when a shower washing dis cow watch so washing dishes showering and what was the last thing

Actually the kind giving food or anything to someone ( monks, poor people) is sharing our wealth and reducing our greed and selfishness in Buddhism. Many Thais always or often give food to monks is the practising way to diminish thier greediness not wishing to get the samething in their next lifes ( some may hope the returns from their giving that not the right beleiving of Buddhists )

Sa wat dee "Chao" is a northern dialect, FYI. Thailand's old name was Siam. It's the result of combining kingdoms that joined forces to resist the divide-and-rule tactics employed by Western countries aiming to colonize the surrounding kingdoms. Siam is the sole survivor because all the small kingdoms agreed to join Bangkok peacefully, while Burma, India, Laos, Cambodia, and Vietnam fell they aint weak but at that time they didn’t manage to unite as a single state. Some may suggest that France and England used Siam as a buffer state, but that would be a misunderstanding. Siam wasn't Liberia; it was very very fertile and strategically located with two seas bordering it in the heart of Southeast Asia mainland. Eventually, those countries might have tried to take over Siam, but Siam managed to last until the First World War and then World War II. If you're interested in history, don't forget to visit Prachuap Khirikhan and Kanchana Buri those provinces are as beautiful as the history you may find.
Unlike Western countries, the concept of the nation-state arrived very late in this region. Back then, the most important asset wasn't the land, as there was plenty, but the people. Stronger kingdoms, when victorious, would burn down other kingdoms and relocate the people not as full time enslave but will use them as worker they can save money and have their own land given by the King, but it doesn’t have to end up being burn if surrender the small kingdom can govern they own land but have to send their prince as hostile the prince will have every right as the prince under the King this method is to merge the Kingdom later on.
At its peak, Siam could colonize other language-speaking ethnic groups, relocating them to Ayuthaya (capital before Bangkok) and Bangkok, turning them into Siamese, a term referring to people who live in present-day Thailand. This doesn't denote a specific ethnic group but mostly those who speak Tai.and that’s why Siam change their name into Thailand because of the Nation state ideology.
Tai (including Lao) is the majority ethnic group, but there are others, such as the Mon, which is the foundational civilization in this region shared with Burma (Burmese, immigrants from Tibet 2-3000 years ago), Malay, and Khmer etc. They all have different language roots, not sharing the same root as Tai, but they coexist in this region. At home, they may speak their own languages, but Tai serves as the communication language. Each Tai tribe speaks differently; if you consider how Sweden, Denmark, or Norway have different languages, each province in Thailand also speaks a different language but unlike those Scandinevia countries since Siames live together hundreds of year then it blended in already. However, they are similar and have undergone Thainization. Consequently, most Thai people able to speak the central dialect. Since it is no longer practical to speak some dialects or old languages, they are fading away even the government nowaday try to preserve but it hard to get people to do what they find useless. Even Thai-Chinese, just second generation, has already abandoned their parent language already. Chiang Mai is special; they have managed to preserve their roots quite well compare to most provinces in Thailand that how they stood out from other even Thai people can feel the different.

This tour guide speaks Thai. (pronounced well) with the letter "R", for example "Krup" is not "Kup", "Aroi" is not "Aloi" etc.. I think you learned Thai from Thai people from the northeastern part of Thailand (which have influence from Lao language and a lot of them work in Bangkok) near the border with Laos and also from older Thai-Chinese people often skip the letter "R" (difficult to pronounce), and because the Lao language does not use the letter "R", only use the letter "L", of course, (central) Thai official language uses the letter "R", such as 'drink'. , 'drone' etc. as in English. Thai and Lao language has about 60-70% similarity.
The tour guide also speaks Northern dialect and (central) Thai official language quite well.

That's fantastic local tour. Food look delicous. May I advise you about how to eat in Thailand ? Rice is a base. it isn't just a side dish in Thailand. It's the foundation of the meal. Take a small spoonful of rice onto your plate and then spoon some soup on top.(Not dip spoon of rice in the soup) Use your utensils to mix them, scoop it up together and put it in the mouth with spoon. Most of people in Thailand use fork and spoon for their daily meals. Chopsticks are only used when you eat the noodle, sushi and Moo krata (ThaiBBQ). For formal meal o, when you eat with others, A serving spoon is a must especially when there is soup. By the way, Eating with bare hand is considering normal for people in rural areas especially, from Northern East (Isarn) of Thailand. I hope you will enjoy more eating Thai food.
